This 2 Minute Protein Cookie is my new go-to snack! It’s gluten-free, vegan, refined sugar-free, and packed with protein to keep you satisfied and full without any blood sugar crashes.
The best part about this recipe is that it’s the perfect quick snack, dessert, or even BREAKFAST! I mean, if you think about it, it’s practically like oatmeal in cookie form π
All you need for this Protein Cookie is…
oatsβ blended into flour (or buy oat flour at the store)
vanilla protein powderβ I use Sprout Living (discount code is callascleaneats)
maple syrupβ used as an unrefined sweetener
nut butter of choiceβ I used Kirkland brand organic peanut butter (one of my faves!)
pinch of salt
milk of choiceβ I used homemade cashew milk
chocolate chipsβ the brands I typically use are Enjoy Life Foods and Nestle Tollhouse Simply Organic
2 Minute Protein Cookie
Ingredients
- 6 tbsp oat flour (blend oats in blender or buy at the store)
- 1 tbsp vanilla protein powder
- 1 tbsp maple syrup
- 1 tbsp nut butter
- pinch salt
- 2-3 tbsp milk of choice
- chocolate chips
Instructions
- Mix all ingredients in a small bowl. Roll dough into a ball.
- Top with chocolate chips, microwave for 30 seconds, and enjoy!
SO GOOD!! I have been making this in the afternoons for a sweet treat and I am becoming addicted – it’s SO quick, SO easy and SO DELICIOUS!
