2 Minute Protein Cookie

Ingredients

  • 6 tbsp oat flour
  • 1 tbsp vanilla protein powder
  • 1 tbsp maple syrup
  • 1 tbsp nut butter
  • pinch salt
  • 2-3 tbsp milk of choice
  • chocolate chips

Instructions

  • Mix all ingredients in a small bowl.
  • If your batter is too wet, add more protein powder or flour. If your batter is too dry, add a little extra milk. The consistency will vary based on which kind of protein powder, flour, and milk you use — so it's normal to have to play with the ingredient ratios a little bit until you reach a dough-like consistency. The dough will be sticky — that's okay!
  • Place the cookie dough onto a microwave-safe plate and press / shape into a cookie. Lightly dampen your fingers with water to prevent sticking while you form your cookie.
  • Top with chocolate chips and microwave for 60 seconds. Optional to sprinkle with sea salt. Let cool and enjoy!
