Healthy Reese’s Eggs

I make these Healthier Reese’s Eggs every year around this time and they are always a huge hit! They are vegan, gluten-free, dairy-free, contain much less sugar than the classic version, and even sneak in some extra protein!

Anything chocolate and peanut butter— count me in. These are one of my favorite treats! I actually love keeping my freezer stocked with them year around. This recipe is based off of my Healthy Protein Peanut Butter Cups, so between the cups and the eggs, I always have a good freezer stash 😉

It’s obviously a plus that these have added protein from the protein powder but in my opinion, the best part of using protein in this recipe is that you don’t need to add any sweetener to the peanut butter (because the vanilla protein is already sweetened) and it also creates the most delicious decadent fluffy texture.

Do I have to use protein powder?

Nope 😊 while using protein powder is my personal favorite way to make this recipe, you do not have to if you don’t have any or if you aren’t a fan of it.

When I skip the protein, I usually use a mix of almond and coconut flour and also add in some coconut sugar. You could also use maple syrup, honey, or regular sugar instead or skip the sweetener all together if you are looking for a less sweet flavor.

What protein powder do you recommend?

My two favorite protein powders are Sprout Living and Nuzest.

I typically use Nuzest for baking (like this recipe!) or if I want to add a good amount of sweetness to something (ex. if I want my smoothie to taste more like a milkshake). I have loved Nuzest for years— the flavor is delicious and the ingredients are simple. My discount code is “callascleaneats”.

I usually use Sprout Living for most of my smoothies, add it to oats, etc. It has a little bit of natural sweetness but not too overpowering which I love for every day eats! How do you store them?

Keep these babies stored in the freezer! You can enjoy them directly from your freezer stash or let them thaw a few minutes if you prefer them a little bit melty.

Healthy Reese’s Eggs

Ingredients

  • 1/2 cup peanut butter (look for a brand that only contains peanuts or peanuts and salt)
  • 1/4 cup vanilla protein powder (see above for what brand I use)
  • 1/2 cup chocolate chips (vegan)
  • 1 tsp coconut oil

Instructions

  • Add peanut butter to a bowl and microwave for 15 seconds.
  • Stir in protein powder until you get a nice fluffy texture.
  • Scoop out about 2 tbsp each and set on a parchment paper lined plate. Lightly form into eggs with a spoon or your fingers. Freeze for at least 2 hours. Once they are frozen, you can smooth out any bumps/form them a little better if you want.
  • Melt chocolate and coconut oil in the microwave in 30 second increments, stirring between each.
  • Dip each egg into the chocolate and set back into the freezer for 5 minutes.
  • Optional— use remaining chocolate for an extra chocolate drizzle if you want and top with flakey sea salt.
  • Once they are re-frozen, you can cut around the edges if there’s any access chocolate to make them into perfect eggs shapes!

    I have unsweetened protein powder. How much maple syrup or coconut sugar should I add for this to taste good?
