2 Minute Protein Cookie

This 2 Minute Protein Cookie is my new go-to snack! It’s gluten-free, vegan, refined sugar-free, and packed with protein to keep you satisfied and full without any blood sugar crashes.

The best part about this recipe is that it’s the perfect quick snack, dessert, or even BREAKFAST! I mean, if you think about it, it’s practically like protein oatmeal in cookie form 😆

Ingredients you will need for this Protein Cookie…

oats— I love using these glyphosate-free and gluten-free oats and blending them into flour (or you can buy oat flour). You can also use almond flour if you prefer or want to keep this recipe grain-free / lower carb.

vanilla protein powder— you can use plant-based or whey protein here — whatever you have on hand or prefer! I have been loving FlavCity protein powder (discount code: CALLA).

maple syrup— used as an unrefined sweetener. You can also use honey if you prefer.

nut butter of choice— I used the Kirkland brand organic peanut butter from Costco (one of my faves!). When buying nut butter, for the most part, I make sure the only ingredients are the nut and salt. So if you are looking for a good peanut butter, you want the only ingredients to be “peanuts” and “salt”. Always make sure to check your ingredient labels! We want to avoid inflammatory oils and added sugar!

pinch of salt — this is my go-to mineral salt I use for EVERYTHING.

milk of choice— I use homemade cashew milk or a clean store-bought almond milk.

chocolate chips— it’s hard to find chocolate chips made with simple ingredients! Here are a few of my favorites: Enjoy Life chocolate chips, Hu Kitchen chocolate gems, Pascha 85% dark chocolate chips.

How to make this 2 Minute Protein Cookie:

Start by adding all ingredients to a bowl and mix well until you reach a dough-like consistency. The dough will be sticky, that’s normal! Depending if you use oat flour or almond flour, which kind of protein you use, and which kind of milk you use… you may need to play with the ratios a bit. If your batter is too wet / sticky, you can add a little extra protein powder or flour. If your batter seems too dry (we don’t want a dry cookie!!), add a little extra milk or maple.

Once you have your dough ready, place it onto a microwave-safe plate. Lightly rinse your fingers with water (this will help to prevent the dough from sticking) and then press your cookie into a cookie shape. You can also smooth out the top if you want it to be pretty but it will taste just as good if not!

Next, add your chocolate chips of choice. This would also be delicious with white chocolate chips or a sliced peanut butter cup on top! I make these homemade peanut butter cups all the time — they are better than a Reese’s and a whole lot healthier! Yum!

Finally, place in the microwave for 60 seconds. If you want your cookie to be firmer, you can microwave for 90 seconds. If cookie dough is more your vibe, you can microwave for 30 seconds.

I personally love to add some flakey sea salt on top — I love the sweet and salty combo and chocolate is just BETTER with salt. Trust me. Let your cookie cool, and then enjoy!! So simple.

This protein cookie is honestly perfect for any time of the day! A quick breakfast, a pre-workout snack, a post-workout high-protein refuel (hey, sometimes I want a cookie instead of a protein shake after my workout!), an afternoon snack (I alwayssss have a sweet tooth in the afternoon and instead of grabbing something heavy + high in sugar, this actually fuels me through my afternoon work instead of causing me to crash more), or of course, DESSERT! It pairs amazingly with some vanilla ice cream or coconut whip 😉

Are protein cookies healthy?

This 2 minute protein cookie is gluten-free, dairy-free, vegan, refined sugar-free, contains protein and also some healthy fats making it a great healthy option! It’s also made with real-food ingredients that you can pronounce instead of many regular cookies / store-bought protein cookies that contain artificial sweeteners, preservatives, gums, and chemicals.

Can you make any other flavors with this protein cookie?

This protein cookie is an amazing base to make ANY flavor you’re craving! More chocolate? Add some cocoa powder! Want more of a snickerdoodle flavor? Add some cinnamon! Craving a sugar cookie? Add almond extract, take out the chocolate chips, and add a little bit of frosting on top! You coudl also use white chocoalte chips, slice up a homemade peanut butter cup and place on top instead of regular chocolate chips, add in some pumpkin spice if you’re in the fall mood! The protein cookie possibilities are endless!!

Ingredients

  • 6 tbsp oat flour
  • 1 tbsp vanilla protein powder
  • 1 tbsp maple syrup
  • 1 tbsp nut butter
  • pinch salt
  • 2-3 tbsp milk of choice
  • chocolate chips

Instructions

  • Mix all ingredients in a small bowl.
  • If your batter is too wet, add more protein powder or flour. If your batter is too dry, add a little extra milk. The consistency will vary based on which kind of protein powder, flour, and milk you use — so it's normal to have to play with the ingredient ratios a little bit until you reach a dough-like consistency. The dough will be sticky — that's okay!
  • Place the cookie dough onto a microwave-safe plate and press / shape into a cookie. Lightly dampen your fingers with water to prevent sticking while you form your cookie.
  • Top with chocolate chips and microwave for 60 seconds. Optional to sprinkle with sea salt. Let cool and enjoy!
