This Single-Serve Brownie Cookie is gluten free, vegan, and low in sugar. In less than fifteen minutes, you’ll have a delicious, chewy treat that’s rich in chocolate and perfectly sized for one. It’s the ultimate cross between a fudgey brownie and a soft double chocolate cookie. You’ll be wondering how something so simple could taste SO good!

I’m all about a good single-serve recipe recipe because they’re ideal for when you’re in the mood for a sweet treat but don’t want to put the effort and energy into making a whole batch of something. Or maybe you don’t have the ingredients for an entire batch but have just enough for a little something for yourself. I usually have stashes of my recipes stored in my freezer for times that sweet tooth kicks in but most of the time, I go for one of my single-serve cookies as a go to. They’re some of my most popular and favorite recipes like my Hot Cocoa Cookie, Pumpkin Cookie, and Sugar Cookie and each one is just as delicious as the others. I needed to add a double chocolate version into the mix and this Brownie Cookie quickly became an obsession 😍

I can honestly say that through the years, I think I’ve perfected THE best cookie texture – slightly crispy edges, soft and chewy center. This chocolatey cookie hit right on the mark! Plus, it’s the best of both worlds as you get hints of brownie as well. The secret for getting this crisp outside and pillowy inside is by baking in the air fryer. It’s still incredible when it’s baked in the oven but I find that the outside has a bit more of a satisfying crunch when I use the air fryer. I’ve included both methods in the recipe so you can use what you have or see which way of baking you like better!

What You’ll Need

  • Oat flour— You can buy oat flour at the store or simply blend oats in a blender or food processor until you reach a flour consistency. I personally prefer blending my own because it’s so simple and one less extra thing to buy since I always have these Gluten Free Oats in my pantry!
  • Cocoa powder— Make sure it’s unsweetened or you can use cacao powder but might need a touch more sweetener.
  • Nut butter— Feel free to use whatever natural nut butter you prefer or have on hand. Just make sure the only ingredient is the nut (and maybe some salt!). I used peanut butter because I am a biiiiig fan of the peanut butter + chocolate flavor. I would use almond butter or cashew butter for a more neutral flavor!
  • Maple syrup — To keep this refined sugar free, we’re using maple syrup to naturally sweeten the cookie. You can also use another liquid sweetener like honey or agave.
  • Milk of choice— Use dairy free milk like oat, almond, coconut, cashew, etc. to make this dairy free and vegan. Regular milk will work too.
  • Baking soda
  • Sea salt
  • Chocolate chips — To keep this vegan, use dairy free chocolate chips like Hu or Enjoy Life. Any kind will work though!

How To Make

  1. Preheat the oven to 350F and line a baking sheet with parchment paper. If you’re using the air fryer method instead, line the bottom of the air fryer basket with parchment paper.
  2. In a large bowl, mix all ingredients together until a thick dough forms.
  3. Lightly wet your fingers with water and roll the dough into a large cookie shape. Then, place it on top of the parchment paper. (Tip: When working with sticky dough like this, wetting your fingers first helps keep it from sticking as much!)
  4. Add chocolate chips on top and bake for five to seven minutes. Make sure to check the cookie and time often because each oven and air fryer are different! You want it to be risen, slightly cracked, and firm.
  5. Add additional toppings of choice to your finished cookie and enjoy! (Tip: I LOVE adding peanut butter, chocolate chips, and flakey sea salt to mine.)

Ingredients

  • 1/4 cup oat flour
  • 1 tbsp cocoa powder
  • 1 tbsp nut butter
  • 1 tbsp maple syrup
  • 1/4 tsp baking soda
  • pinch salt
  • 1 tbsp milk
  • chocolate chips (for topping)

Instructions

  • Preheat oven to 350F and line a baking sheet with parchment paper. If using the air fryer method, line the bottom of the air fryer basket.
  • Mix all ingredients in a bowl, leaving out any chocolate chips you want to place on top of the cookie.
  • Wet your fingers with water (so the batter doesn’t stick!) and form a large cookie shape.
  • Add chocolate chips and bake at for 5-7 minutes (check on it often because every air fryer is different).
  • Add any additional toppings you choose to your finished cookie and enjoy!

Note: my fave way to top it is with peanut butter, chocolate chips and flakey sea salt!
