Single Serve Brownie Cookie

I am all about a good single-serve recipe and this Single Serve Brownie Cookie is one of my favorites!

You know a perfect cookie by the slightly crispy outside edges with a soft and chewy center and this chocolate-y cookie hit right on the mark! Plus, it’s the best of both worlds as you get hints of brownie as well.

This Single Serve Brownie Cookie is gluten-free, vegan, super simple to make, and can be ready within minutes!

I love baking this cookie in the air fryer because it takes the crispy edges to the NEXT level! But you can also bake it in the oven and it is still incredible.

What you need for this SUPER delicious Single Serve Brownie Cookie:

  • oat flour— you can buy oat flour at the store or simply blend oats in a blender or food processor until you reach a flour consistency. I personally prefer the latter as it is so simple and inexpensive!
  • cocoa powder— unsweetened. You can also use cacao powder. This gives the cookie that rich chocoate flavor!
  • nut butter— feel free to use whatever natural nut butter you prefer or have on hand. Just make sure the only ingredient is the nut (and maybe some salt!). I used peanut butter because I am a biiiiig fan of the peanut butter + chocolate flavor. I would use almond butter or cashew butter for a more neutral flavor.
  • maple syrup— as an unrefined sweetener. You can also use honey.
  • milk of choice— oat, almond, coconut, cashew… any of these will work!
  • baking soda
  • salt
  • chocolate chips— you only new a few to really take this cookie to the next level!

And from there— pretty much all you need to do is mix the ingredients, form a cookie shape, and bake! So so simple.

Single Serve Brownie Cookie

Ingredients

  • 1/4 cup oat flour
  • 1 tbsp cocoa powder
  • 1 tbsp nut butter
  • 1 tbsp maple syrup
  • 1/4 tsp baking soda
  • pinch salt
  • 1 tbsp milk
  • chocolate chips (for topping)

Instructions

  • Mix all ingredients in a bowl. Place on a parchment paper lined baking tray or air fryer basket.
  • Wet your fingers with water (so the batter doesn’t stick!) and form a cookie shape.
  • Add chocolate chips and bake at 350F for 5-7 minutes (check on it often because every air fryer is different).
