Single-Serve Pumpkin Cookie (Gluten Free, Vegan)

This single-serve cookie recipe is made of simple ingredients that make this a balanced and satisfying treat that’s ready in minutes!

I love all things pumpkin spice (it’s not just a fall flavor!) and pumpkin cookies with cream cheese frosting are one of my favorites. But what’s better than a regular-sized cookie? A GIANT one!

Sometimes your sweet tooth hits but you don’t want to bake an entire batch of cookies, a whole pan of brownies, or whatever else sounds good. That’s why I LOVE single-serve recipes!

I’ve made a few other single-serve recipes, but this is one of my current favorites for an afternoon sweet snack. Quick, easy, and satisfies those cravings!

You can leave these cookies plain, but I HIGHLY recommend adding cream cheese frosting and some extra pumpkin spice. To keep things easy, I just mix a couple spoonfuls of vegan cream cheese with powdered sugar until it thickens to form a frosting! Totally optional, but I think it makes this even better!

What you need to make this Giant Single Serve Pumpkin Cookie:

  • Gluten-free flour – I use Bob Red Mill 1:1 GF baking flour (blue bag!).
  • Cashew Butter – or nut / seed butter of your choice.
  • Coconut Sugar – or any granulated sweetener (maple sugar, raw cane sugar, etc).
  • Pumpkin puree – check that the only ingredient is pumpkin.
  • Pumpkin pie spice – yum!
  • Baking soda – helps make them fluffy.
  • Salt – just a pinch.

Giant Single Serve Pumpkin Cookie

Ingredients

  • 1/4 cup gluten-free flour
  • 1 tbsp cashew butter (or any nut / seed butter)
  • 2 tbsp coconut sugar
  • 4 tbsp pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/4 tsp baking soda
  • 1 pinch sea salt

Optional: Frosting – vegan cream cheese + powdered sugar

    Instructions

    • Preheat oven to 350F and line a baking sheet with parchment paper.
    • Add all ingredients to a small bowl and mix well. Roll into a ball and flatten onto the baking sheet.
    • Bake for 12-14 mins and let cool completely.
    • Add frosting of choice. Enjoy!
