This easy healthy single serve brownie cookie is gluten free, vegan, dairy free, plant based, refined sugar free, low sugar, and clean eating. On a sheet of parchment paper is a freshly baked giant cookie for one. Rich dark chocolate color, topped with slightly melted chocolate chips and flakey sea salt and peanut butter. The sides are slightly crisp with cracks along like a brownie. The inside shows a thick, pillowy soft, gooey texture.

Single Serve Brownie Cookie (Gluten Free, Vegan)

Ingredients

  • 1/4 cup oat flour
  • 1 tbsp cocoa powder
  • 1 tbsp nut butter
  • 1 tbsp maple syrup
  • 1/4 tsp baking soda
  • pinch salt
  • 1 tbsp milk
  • chocolate chips (for topping)

Instructions

  • Preheat oven to 350F and line a baking sheet with parchment paper. If using the air fryer method, line the bottom of the air fryer basket.
  • Mix all ingredients in a bowl, leaving out any chocolate chips you want to place on top of the cookie.
  • Wet your fingers with water (so the batter doesn’t stick!) and form a large cookie shape.
  • Add chocolate chips and bake at for 5-7 minutes (check on it often because every air fryer is different).
  • Add any additional toppings you choose to your finished cookie and enjoy!

Note: my fave way to top it is with peanut butter, chocolate chips and flakey sea salt!
