This Chocolate Mousse is gluten free, high in protein, and so chocolatey rich you would have no idea that the main ingredient is cottage cheese! Itโ€™s perfect for a quick snack or treat when that sweet tooth kicks in.

If you havenโ€™t hopped on the viral cottage cheese trend yet, I donโ€™t blame you, because I was skeptical at first too. But now that Iโ€™ve tried so many recipes, both sweet AND savory, with cottage cheese being the main ingredientโ€ฆ Iโ€™m such a fan! Iโ€™ve been loving to see how I can sneak it into recipes where youโ€™d never guess this was even involved. And let me tell you, I think Iโ€™ve gotten pretty great at sneaky high protein recipes like my Salted Caramel Cottage Cheese Ice Cream, Cottage Cheese Microwave Brownie, Cottage Cheese Pumpkin Pie, and now this mousse! Sure itโ€™s just as delicious in savory recipes too but what can I say, I have a sweet tooth ๐Ÿคทโ€โ™€๏ธ

Cottage cheese is one of my favorite ways to add more protein into my diet which helps support hormone health, blood sugar, muscle growth, and SO much more! Add it to eggs, pancakes, breakfast bowls, desserts โ€“ the possibilities are endless and I feel like Iโ€™ve tried them all.

What Youโ€™ll Need

  • Cottage Cheese โ€“ My favorite that I use in almost all of my recipes is this full-fat one by Good Culture, itโ€™s very thick, creamy, and high quality compared to others Iโ€™ve tried!
  • Cocoa powder โ€“ Make sure itโ€™s unsweetened. You can also use cacao powder but you might need to add a little more sweetener.
  • Powdered sugar โ€“ I always buy organic for this and if you want a lower sugar option powdered monkfruit works great or even maple syrup.

Optional Chocolate Shell

How To Make

  1. Pour all of the ingredients into a high-speed blender or food processor.
  2. Blend until completely smooth. This will take a bit for the mixture to thin out!
  3. Then, pour everything into a small dish or jar and set it in the freezer for one to two hours until firm. (Tip: To prevent iciness, stir once about halfway through.)
  4. Once the mousse is set, you can add the hard chocolate shell. To make the shell, add one tablespoon of chocolate chips and one teaspoon of coconut oil to a small bowl. Microwave for ten seconds, stir, and repeat until completely smooth. (Tip: You can also use a double broiler method โ€“ filling a saucepan with an inch or two with water and bringing to a simmer, placing the small bowl of ingredients into the pan where itโ€™s not touching the water but being heated. Stir until smooth.)
  5. Pour the melted chocolate on top of the mousse, add some sea salt, and enjoy!

Cottage Cheese Chocolate Mousse (Gluten Free, High Protein)

Ingredients

  • 1 cup cottage cheese
  • 1/4 cup cocoa powder (or cacao powder)
  • 1/4 cup powdered sugar or powdered monkfruit (or maple syrup)

Optional Chocolate Shell

  • 1 tbsp chocolate chips
  • 1 tsp coconut oil

Instructions

  • Blend cottage cheese, cocoa powder, and sweetener until smooth and thin.
  • Pour into a jar and freeze for 1-2 hours, stirring once halfway through.
  • Once set, take out of the freezer and make the chocolate shell. Melt chocolate in the microwave for 10 seconds, stir, and repeat until fully melted.
  • Pour on top of mousse, add sea salt, and enjoy!
