Sweet Potato Brownies (paleo-friendly!)

SWEET POTATO COLLAGEN BROWNIES! These are the fudgiest, most DELISH brownies. You would never in a million years guess they’re refined sugar-free, paleo, and contain sweet potatoes + collagen protein 🙌🏼

Even all of my siblings were obsessed (and they’re a tough crowd considering they’re used to regular ole sugar + flour filled brownies). These were gone in about five minutes. Luckily, I’ve learned how any kind of treat goes in this house so I hid a few for myself before I offered the rest 😉

These Sweet Potato Brownies are so easy to make, you simply add all of your ingredients to a food processor or blender!

You can always prep your sweet potato in advance and store in the refrigerator until you are ready to make the brownies.

Sweet Potato Brownies

Ingredients

  • 1/2 cup almond flour
  • 1 medium sweet potato (about 1 cup baked and skinned)
  • 1/4 cup almond butter
  • 2/3 cup coconut sugar
  • 2 scoops collagen (optional)
  • 2 eggs
  • 1/4 cup cocoa or cacao powder (unsweetened)
  • 1 tsp baking soda
  • dash sea salt

Instructions

  • Preheat oven to 350F. Using a fork or knife, carefully pierce holes in sweet potato and bake until you can easily stick a fork through (about 1 hour). You could also microwave or boil your sweet potato. Once it’s cooked, peel off the skin (you can do this entire step in advance if needed!).
  • In your food processor, add all ingredients and mix until fully combined.
  • Line an 8×8 baking dish with parchment paper. Pour batter into dish and smooth out the top.
  • Bake 35-40 min or until a toothpick comes out clean
  • Wait until they fully cool to remove from dish and slice (makes 9 large or 16 medium sized).

    These are amazing! I subbed in oat flour and sunflower seed butter because #nutallergy but they were still incredible!
