1medium sweet potato (about 1 cup baked and skinned)
1/4cupalmond butter
2/3cupcoconut sugar
2scoops collagen(optional)
2eggs
1/4cupcocoa or cacao powder(unsweetened)
1tspbaking soda
dashsea salt
Instructions
Preheat oven to 350F. Using a fork or knife, carefully pierce holes in sweet potato and bake until you can easily stick a fork through (about 1 hour). You could also microwave or boil your sweet potato. Once it’s cooked, peel off the skin (you can do this entire step in advance if needed!).
In your food processor, add all ingredients and mix until fully combined.
Line an 8x8 baking dish with parchment paper. Pour batter into dish and smooth out the top.
Bake 35-40 min or until a toothpick comes out clean
Wait until they fully cool to remove from dish and slice (makes 9 large or 16 medium sized).
