Easy Mexican Power Bowl

This Easy Mexican Power Bowl recipe is one of my family’s go-to quick and easy staple meals. It’s delicious, healthy, and requires almost zero time + effort! It also makes for amazing leftovers!

Notice that this recipe is pretty vague… that is on purpose! It is hard to mess up (my kind of recipe šŸ™Œ) and super customizable! You basically just throw everything into a pot and are good to go.

I like to make a big batch of bone broth rice and and some chicken at the beginning of each week to have on hand to throw into any kind of meal. That makes this recipe come together in less than 5 minutes because I basically just add everything into the pot to heat up!

If you have a few extra minutes, these power bowls are amazing with peppers, onion, corn, sour cream, and any other toppings you like!

If you are vegetarian or vegan, I recommend swapping out the chicken for your favorite plant-based protein. I like lentils!

Easy Mexican Power Bowl

Ingredients

  • chicken (pre-cooked)
  • black beans
  • rice (sprouted if possible)
  • bone broth (optional)
  • avocado
  • salsa

Instructions

  • Cook chicken using any preferred method (bake, sautee, instant pot, etc.). I have been using organic rotisserie chicken for convenience.
  • Cook rice according to package. Instead of using water, I use bone broth for extra protein, flavor, and gut healing properties!
  • Once your rice is done, add it to a pot with chicken, black beans, salsa of choice, and cheese (optional). Feel free to toss in some peppers, onion, corn, or any other desired add-in's as well!
  • Top with avocado and hot sauce.
