S’mores Baked Oatmeal

This S’mores Baked Oatmeal is my DREAMMM way to enjoy oatmeal. It’s gluten-free, vegan, and full of chocolate chips, graham crackers, and toasty marshmallows.

I love enjoying this S’mores Baked Oatmeal as an afernoon snack or dessert and even for breakfast!

Now, I know you may be thinking “s’mores for breakfast???” but to be honest, this is a pretty balanced and healthy breakfast since contains complex carbohydrates from the oats, fiber from the chia seeds, and even a little protein powder boost!

Back to basics— what is baked oatmeal?

Baked oatmeal is basically a muffin and oatmeal hybrid! You take all of the ingredients you would normally add to oats and bake it in the oven creating the most DELICIOUS cake/muffin-like texture.

This S’mores Baked Oatmeal is made with

  • oats— of course! Rolled oats are best.
  • chia seeds— as a binder in place of an egg. They also add healthy fiber!
  • vanilla protein powder— for a little extra protein and is also used as a sweetener. Feel free to skip the protein powder and add sweetener of choice + a little bit less milk.
  • baking soda
  • milk of choice— I typically use almond, cashew, coconut, or oat milk.
  • 1 graham cracker sheet— make sure to use gluten-free graham crackers if you are gluten-free. I have tried both gluten-free and regular graham crackers and they both work great!
  • chocolate chips— be sure to use vegan chocolate chips if you are strict vegan.
  • marshmallows— make sure to check your label here as well to make sure they are vegan if you prefer to keep this recipe vegan.

S’mores Baked Oatmeal

Ingredients

  • 1/3 cup oats
  • 1 tsp chia seeds
  • 1 tbsp vanilla protein powder
  • 1/4 tsp baking soda
  • 1/3 cup + 2 tbsp milk of choice
  • 1 graham cracker sheet
  • 1 small handful chocolate chips
  • 1 small handful marshmallows

Instructions

  • In a bowl mix oats, chia seeds, protein powder, baking soda, milk, and 1/2 graham cracker sheet (crushed).
  • Add in marshmallows and chocolate chips and stir again.
  • Pour into a lightly greased oven safe baking dish. Top with the other 1/2 graham cracker sheet (crushed), and a couple more marshmallow and chocolate chips.
  • Bake at 350F for about 20 minutes.
