Blueberry Baked Oatmeal

This Blueberry Baked Oatmeal is so simple to make and is gluten-free, dairy-free, and contains no added sugar.

I love having baked oatmeal on hand for easy breakfast and snacks. So fun to experiment with new flavors (be sure to check out my Banana Chocolate Chunk Baked Oatmeal!)

This Blueberry Baked Oatmeal is sweetened only with blueberries and a small amount of vanilla protein powder.

If you are planning to leave the protein powder out, I recommend adding a dash of some sort of flavor/sweetener such as vanilla extract, honey, coconut sugar, maple syrup, etc.

I love topping this baked oatmeal with a big spoonful of nut butter!

Blueberry Baked Oatmeal

Ingredients

  • 1.5 cups oats
  • 1 banana
  • 2 eggs
  • 1 scoop vanilla protein powder
  • 1 cup water
  • 1/2 cup fresh or frozen blueberries + more for topping
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350 and line a square baking dish (8×8) with parchment paper. 
  • Mash banana in a large bowl. Mix in all other ingredients (except blueberries).
  • Stir in blueberries.
  • Pour batter into baking dish and bake for 15 minutes, then add more blueberries on top (this is so that they don’t all sink to the bottom) and then bake another 30 minutes.

  1. Can you make the Blueberry Baked Oats without the protein powder? wasn’t sure if the powder was an essential ingredient? Thanks

    • Hi! Yes you can, I would probably add a dash more oats or a little less milk and add in your preferred sweetener (Honey, maple syrup, brown sugar, etc!)
