Blueberry Lemon Baked Oatmeal

Back to basics— what is baked oatmeal?

Baked oatmeal is basically a muffin and oatmeal hybrid! You take all of the ingredients you would normally add to oats and bake it in the oven creating the most DELICIOUS cake/muffin-like texture.

This Blueberry Lemon Baked Oatmeal is made with

  • oats— of course! Rolled oats are best.
  • chia seeds— as a binder in place of an egg. They also add healthy fiber!
  • maple syrup— as an unrefined sweetener. You can also use honey.
  • baking soda
  • milk of choice— I typically use almond, cashew, coconut, or oat milk.
  • lemon juice— the juice of about 1/2 small lemon or 1/4 large lemon.
  • lemon zest— for that extra lemon-y zing!
  • bluerries— of course! They taste extra sweet from being baked 🤤
  • poppyseeds— optional but they add that extra blueberry muffin feel!
  • almond extract— also optional but suuuuuper delcious with the blueberries and lemon.

Blueberry Lemon Baked Oatmeal

Ingredients

  • 1/2 cup oats
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp poppyseeds
  • 1/8 tsp almond extract
  • 1/4 tsp baking soda
  • pinch salt
  • handful blueberries + extra for topping
  • 1/2 cup milk

Instructions

  • Preheat oven to 350F. Lightly grease oven-safe baking dish.
  • Add all ingredients to a bowl and mix well. Pour into baking dish and top with additional blueberries.
  • Bake for 20-25 minutes. Add nut butter of choice and enjoy!
