Nutella Baked Oatmeal

This Nutella Baked Oatmeal tastes like a giant chocolate-y hazelnut muffin but is actually low in sugar and made with OATS!

It is also gluten-free, dairy-free, made with a few simple ingredients (that you probably already have on hand!), and is sweetened only with 1/2 of a banana and my low sugar homemade Nutella!

What you need for this Nutella Baked Oatmeal:

  • oats— obv! I typically use sprouted oats organic for easier digestion and to avoid glyphosate but any rolled oats will do.
  • 1/2 banana— the spottier the banana, the better. This is a key sweetener in the recipe and spottier bananas are much sweeter than green/just ripe bananas.
  • cocoa powder— unsweetened. You can also use cacao powder. 
  • 1 egg— for added protein and to create a muffin-like texture. I have not tried this recipe with any egg substitutes but I have had quite a few people tell me that my baked oatmeal recipes work with a flax egg!
  • milk of choice— I used homemade cashew milk but feel free to swap in your preffered kind of milk! Oat, almond, coconut, or regular milk will all work great.
  • a pinch of salt
  • baking soda
  • nutella— I reccomend using my Healthy Homemade Nutella (I promise it’s easy and taste EVEN better than regular nutella!)

Ingredients

  • 1/2 banana (spotty is best)
  • 1 egg
  • 1/4 cup milk of choice
  • 1/2 cup oats
  • pinch sea salt
  • 1/4 tsp baking soda
  • nutella (I recommend using my healthy homemade version!)

Instructions

  • Preheat oven to 350F. Add all ingredients (except nutella) to a blender and blend until fully combined.
  • Pour shout 3/4 of the batter into a lightly greased oven- safe baking dish. Bake for about 15 minutes.
  • Remove from oven, add a big spoonful of nutella to the center, and pour the rest of the batter over the top. Bake for another 15-17 minutes. Enjoy!
