Brownie Baked Oatmeal

This Brownie Baked Oatmeal tastes like a straight-up DESSERT. It’s gluten-free, dairy-free, low in sugar, and contains a solid amount of protein— making it an amazing breakfast, snack, or even dessert option!

All you need are a few simple ingredients that you probably already have on hand. Quickly blend up the ingredients, stick it in the oven, and finish your morning to-do list all while it bakes 😊

This recipe is a well-rounded meal with complex carbohydrates, healthy fat, and protein. The bananas and oats contain healthy carbs, the chocolate chips (bonus for using dark chocolate!) and nut milk contain healthy fat, and the egg adds a little bit of protein as well! You can also add some nut butter on top for additional protein and fat to keep you full and satisfied.

Here are the ingredients you need:

  • oats— obv! I typically use sprouted oats organic for easier digestion and to avoid glyphosate but any rolled oats will do!
  • 1/2 banana— the spottier the banana, the better. This is a key sweetener in the recipe and spottier bananas are much sweeter than green/just ripe bananas. 
  • cocoa powder— unsweetened. You can also use cacao powder.
  • 1 egg— for added protein and to create a muffin-like texture. I have not tried this recipe with any egg substitutes but let me know if you decide to give it a whirl! 
  • milk of choice— I used homemade cashew milk but feel free to swap in your preffered kind of milk! Oat, almond, coconut, or regular milk will all work great.
  • a pinch of salt
  • baking soda
  • chocolate chips or chunks

Brownie Baked Oatmeal

Ingredients

  • 1/3 cup oats
  • 1/2 banana (the spottier, the better!)
  • 1 egg
  • 1/4 cup milk of choice (I like using almond, oat, and cashew milk)
  • 1 heaping tablespoon cocoa powder
  • Pinch salt
  • 1/4 tsp baking soda
  • chocolate chips

Instructions

  • Preheat oven to 350F and lightly grease an oven-safe baking dish.
  • Add all ingredients (except chocolate chips) to a blender and blend until fully combined.
  • Pour batter into baking dish, top with chocolate chips and bake for about 15 minutes.
  • Top with flakey sea salt (optional) and enjoy!

  1. Can I bake it in air fryer to save some energy? What do you suggest for 1 serving for how much time/degrees? Thank you!

    • That should work! I would recommend 350 degrees and just keep a close eye on it! It may cook faster than in the oven 🙂

    • I used the bake setting on my air fryer. Which is 325 for 20 minutes and it came out just right. I cooked it in an 8oz ramekin.

  2. I’m going to make these (after reading Shana’s comment about them in The Mom Edit), but I’m always confused about using half a banana. Some of my bananas are really small and some really long. Would you say 1/2 cup of banana or perhaps 1/4 cup?

    • Hi! I try to use a medium sized banana but it won’t make too much of a difference if you use a larger/smaller 🙂

  3. If I want to meal prep and make several, how would I go about that? I know I wouldn’t quadruple ALL of the ingredients if I wanted to make enough for four. Do you have a recipe for larger quantities? I don’t have time to blend and bake on a daily basis. Thanks!

    This is amazing!!! My mom and dad are on diet. I always try to bake healthier for them and this was sooo on spot. They loved it, I loved it. It reminded me of chocolate souffle.

    I really enjoyed it, but it is not very sweet, so my daughter did not love it. The choc chips make it sweeter. Make sure to cook it until it doesn’t jiggle in the center. I double the recipe and it made enough for 3 ramekins.

    • Hi! Feel free to add a little bit of maple syrup, honey, or sweetener of choice for extra sweetness! And also be sure to use a spotty banana 🙂 hope your daughter loves it that way!

    • Use a online macro calculator using the exact ingredients you used. Or write it up on paper manually. 🙂
      We’ll surely all use different brands or types of ingredients, creating different macros.

  8. Is it supposed to be soufflé style in the middle? My edges were nice and brown/firm but the inside still looked like raw batter.

    • Mine did the same thing and I followed exact recipe. The baked parts tasted good. the part that did not bake was very bitter could not eat that part.

    • It’s because it’s baking soda and not baking powder. I have a baked oatmeal recipe that I make alllllll the time….it called for a 1/4 tsp of baking powder. I accidentally used baking soda one time and it never cooked in the middle…I cooked it for 10min longer too. I am cooking this recipes for the first time I added a tiny bit of baking powder to see what happens

    I loved this. It made 2 servings out of this one recipe. I think I used smaller ramikens. It even amazing warmed in the microwave. Just the right amount of sweet with the chocolate chips.

  10. This was phenominal. I have not liked any baked oatmeal recipes thus far, but the method here intrigued me so I gave it a go. Really a great recipe. I made it as directed this first time, but I can see that other add ins such as nuts, or a drizzle of melted peanut butter, are a possibility in the future. The center was quite jiggly/raw after 15 minutes, so I ended up baking it an additional 10 minutes and it was perfect. I baked it in a 4.25 x 5.25 Staub dish.

    • Hi there! I do not include calorie/macro information in my recipes as I typically avoid counting calories— I’m sorry about that! 🙁 luckily, most of my recipes should be pretty quick to plug into a nutrition calculator such as my fitness pal!

    OMG! I am hooked on this. I can’t seem to get enough. I do not have a sweet tooth and I just love this. It is not sweet at all. I top it with dark chocolate chips and then flaked sea salt when it comes out…Yummy! I feel guilty eating it; but, it is healthy except for the chocolate chips. Thanks!

But for those looking for a more dessert-y option, I always recommend adding extra sweetener such as maple syrup or coconut sugar!   13. I follow exacly the recipe with the only difference is that i don’t put chocolate chips and salt instead i out two pieces of chocolate and is still unsweetened it’s salty i don’t know why

    • Hi! I would definitely add extra maple syrup, honey, or your preferred sweetener for a sweeter taste! Somtimes the oats can have a little bit of a “salty” taste when you don’t have enough sweetener 🙂

    I loved this brownie baked oatmeal. I have frozen bananas for smoothies, so I used half and added 1tsp chia seed to help bind it also a tsp of maple syrup. I did have to bake for an extra 5 minutes. Super delicious! Thank you!

    I quadrupled the recipe and baked in a bread pan. We found there really wasn’t much flavor. Tasted like a weak banana bread. It looked delicious like it was going to taste like a brownie or cupcake but it didn’t.

I’m sorry you didn’t love 🙁 it is definitely a lower sugar recipe so if you are looking for extra sweetness / flavor, I would definitely add extra sweetener such as maple syrup, honey, coconut sugar, brown sugar, or whatever you prefer to taste! I also like adding a sweetened protein powder sometimes 🙂

  21. I followed the recipe but it’s super runny even after baking it for 25 minutes at 350. The top looks done but the inside is still liquid 🙁

    • Hi! Oh no, I’m sorry to hear you were having trouble. Next time I would use a little less milk (or a little more oats!). I’m wondering if the brand of oats / milk you used made a difference. Hope that helps!!

    This was delicious! I modified the recipe by adding. TBSP of sugar, since we didn’t have any soft bananas. Plus I added a scoop of collagen and Just Egg in place of the egg. It took 30 minutes to bake, and even then I had to put it in the microwave for a minute because the center was not finished baking.
