These Homemade Rice Krispies are a healthier version of the treats we know and love! This recipe is gluten-free, can be made dairy-free and vegan, and only has 3 ingredients. Haven’t had Rice Krispies in a while? Well, luckily that’s about to change!

I think we can all agree that a lot of the time, homemade tastes better šŸ’ā€ā™€ļø I had a craving for Rice Krispies the other day, grabbed the ingredients, and whipped up a batch. It was THAT easy! Within an hour I had sweet, chewy, and satisfying treats to snack on.

What You’ll Need For Your Treats

  • Butter – for dairy-free use vegan butter or coconut oil.
  • Rice cereal – I love using organic rice cereal I find at Whole Foods!
  • Mini marshmallows – I used vegan but any would work.
  • Chocolate + sea salt – for topping, but totally optional!

How To Make

First, pour the rice cereal into a large mixing bowl and set aside. Spray a baking dish with oil (I love a neutral one like avocado) and set that aside too!

On the stovetop, add butter (or alternative) to a medium pan and heat until it’s fully melted. Add in your marshmallows and continue to stir until melted and mixed with the butter. I added 2 TBSP of water to help it fully melt together because I used vegan marshmallows – but you might not need to! You might not need to do this, it just depends on the butter/oil or marshmallows used.

Once the mixture is fully combined and has a creamy consistency, pour it over rice cereal and stir until evenly coated. Press the rice krispie mixture into the baking dish. Make sure to move quickly so the marshmallow mixture stays warm! šŸ„°

Set the dish in the fridge for 30 minutes. If you’re adding toppings, melt chocolate chips with a little bit of coconut oil. Drizzle the chocolate over the top of the finished treats and sprinkle with some sea salt.

    • Add butter to pan and melt. Add in marshmallows and stir continuously until melted (I added in 2 tbsp water to help it fully melt together because I used vegan marshmallows).
    • Pour marshmallow mixture over rice cereal and stir until evenly coated. Press rice krispie mixture into baking dish. Move quickly so the marshmallow mixture stays warm!
    • Set in the fridge for 30 minutes.
    • If adding toppings, melt chocolate chips with a little bit of coconut oil. Drizzle chocolate over the top of finished treats and sprinkle with some sea salt. Enjoy!
