Copycat Starbucks Egg White Bites (Gluten Free)

These Copycat Starbucks Egg Bites may be better than the original, yep I said it! They taste amazing, are naturally gluten free, and are filled with healthier, better-for-you ingredients.

I’ve been traveling a lot lately and the other week when I was in the airport, I stopped at Starbucks to grab something to eat. The egg bites at Starbs are delicious and were great for being in a pinch but the ingredients honestly aren’t that great, or gut loving. So when I got home, I wanted to make an easy, healthier version of my own!

These have become a staple high-protein breakfast or snack in my week. I love making a batch and having them on hand to reheat throughout the week! Perfect to add to your meal prep.

What You’ll Need For These Healthier Egg Bites

  • Egg whites
  • Cottage cheese
  • Monterey jack cheese – shredded, can sub any cheese of choice (dairy free works too).
  • Roasted red peppers
  • Spinach
  • Salt & pepper – to taste.

How To Make

Preheat your oven to 300F. Fill a baking dish with 1 inch of water and place it on the bottom rack. This creates a sous vide effect that Starbucks uses to help give the egg bites a fluffier texture!

Blend the egg whites, cottage cheese, shredded cheese, salt, and pepper together until fully combined and smooth. Set this aside. Chop your vegetables, the classic egg bites have spinach and red pepper but feel free to use whatever you have on hand. This recipe is amazing as written, but it’s really easy to switch up!

Next, lightly spray / grease a muffin pan with oil. I love using avocado oil spray but any will work! Pour the egg mixture into each muffin tin, filling almost to the top. Top each with red peppers and spinach.

Bake for 25-30 minutes or until the eggs are set. Let them cool, gently remove from the pan, and enjoy!

  • 1 16oz carton egg whites (or 2 cups)
  • 2/3 cup cottage cheese
  • 1/2 cup monterey jack cheese (shredded, sub cheese or use dairy free)
  • 1/4 cup roasted red peppers (diced)
  • 1/2 cup spinach (finely chopped)
  • salt & pepper (to taste)

Instructions
