This Healthy Cookie Dough Bark is gluten free, vegan, and low in sugar. It’s made with a few simple ingredients and comes together in minutes. Whether you’re dairy free or just wanting to try a new cookie dough recipe, this one will not disappoint!

Cookie dough recipes are my favorite because there’s nothing better than having that same flavor without having to bake a full batch of cookies or worry about it not being edible from the eggs and other ingredients. I’ve been loving making my cottage cheese cookie dough but also love this for a dairy free, crunchier version. It tastes just like eating chilled cookie dough before baking!

I love breaking this into bite size pieces so they’re ready for a quick sweet tooth fix. Perfect to prep and snack on throughout the week!

What You’ll Need

Almond flour

Almond butter – or nut/seed butter of choice.

Coconut oil

Coconut sugar

Milk – I used almond milk!

Vanilla extract

Sea salt

Chocolate chips

How To Make

In a large bowl, mix together all of the ingredients except chocolate chips until a thick dough forms. Stir in your chocolate chips, adding in as many as you’d like!

Line a tray with parchment paper and put the cookie dough on top, forming into one large ball. Flatten out the dough using your palms until it’s even and in a circle shape.

To make your chocolate coating, place half a cup of chocolate chips with a teaspoon of coconut oil in a microwave safe bowl. Microwave for thirty seconds, stir, microwave another fifteen seconds, and stir again. Repeat for fifteen seconds until fully melted.

Next, spread the melted chocolate onto the cookie dough bark and top with sea salt. Place this in the freezer for at least two hours or until fully set. Break apart and enjoy!

Healthy Cookie Dough Bark (Gluten Free, Vegan)

Ingredients

  • 1 cup almond flour
  • 2 tbsp almond butter (or nut/seed butter of choice)
  • 2 tbsp coconut oil (melted)
  • 2 tbsp coconut sugar
  • 1 tbsp milk (can be dairy free)
  • 1 tsp vanilla extract
  • 1 pinch sea salt

Chocolate topping

  • 1/2 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Mix together all cookie dough ingredients except chocolate chips. Stir in chocolate chips.
  • Form into 1 large cookie dough ball. Place on a parchment paper-lined tray and flatten into a circle.
  • For chocolate topping, add another 1/2 cup chocolate chips and 1 tsp coconut oil to a microwave safe bowl. Microwave for 30 seconds, stir, microwave another 15 seconds and stir again. Repeat until fully melted.
  • Spread melted chocolate onto cookie dough bark. Top with sea salt. Place in the freezer for at least 2 hours or until fully set. Break apart and enjoy!
