This Healthy Banana Bark is gluten free, vegan, no bake, and is made with only three simple ingredients. It’s perfect for a midday treat or late night sweet craving!

I was prepping food for the week and wanted to make a healthy dessert that I could stock in my freezer so that any time I was wanting a sweet treat, I had something healthier to grab šŸ™Œ I love a good bark recipe and wanted to give this one a try! It went viral for a reason – the flavors remind me of chunky monkey with the banana, peanut butter, and chocolate. This might just be your new favorite snack too!

What You’ll Need

  • Bananas
  • Nut/seed butter
  • Chocolate – I love using HU chocolate chips for melting!
  • Coconut oil – for melting chocolate.
  • Sea salt

How To Make

Start by slicing two bananas into coins. You can always slice more for multiple batches or depending on the size of your bananas but I usually use two for my bark!

Place parchment paper on a tray that will fit in your freezer. Arrange your banana coins into rows on top of the paper. Once you have those placed how you like, put another sheet of parchment paper on top. Take a cup and smash the bananas a bit to make them flatter. Remove the top parchment paper layer.

Next, add your nut/seed butter of choice and spread evenly on top of the bananas. You’ll want to use a runny nut butter so it’s easier to spread out! I love using Oat Haus Granola Butter to switch things up šŸ˜

Then to melt your chocolate, add a spoonful of coconut oil and microwave for 30 seconds, stir, and repeat until smooth. Pour this over the banana and nut butter and spread evenly. Optional to top with some flakey sea salt!

Stick the tray in the freezer for at least an hour or until everything is firm and set. Break apart and enjoy!

  • Place in the freezer for about an hour or until firm and set.
  • Break apart and enjoy!

    Hi Calla. My wife forwarded this recipe to me as something to prepare for our family members who require gluten free. It sounds delicious.
    What I’m hoping you can provide is storage instructions if not all eaten at once. They sound delish, but probably a bit much for one setting. How should I store the leftovers so they can be enjoyed again and again?

    • Hi Bill! I usually just store them in a ziplock baggie in the freezer. Thaw for a few minutes before enjoying! You can place a small piece of parchment paper in between each piece of the bark to keep them from sticking together šŸ™‚ Hope that helps!
