My Black Friday Favs

There are SO many great deals on tons of my favorite products and brands, I decided to compile them all here to make things easy for you guys (and me! Lol!)

PS. some of these sales are a secret until the day of, but I’ll keep updating this blog post and adding more sales as I hear of them šŸ˜‰

Maple Roasted Squash and Brussels

In case you need a last minute, easy, delicious side dish to bring to any thanksgivings/friendsgivings… here’s what my contribution was last year and also this year!

Last year, I just used pecans and dried cranberries for the fruit and nut part but this year I was feeling fancy and used Made in Nature Pomegranate Ginger Supersnacks (basically just a mix of maple syrup-sweetened nuts and dried fruits!). I bought them at Meijer but you can also find them at Whole Foods.

This recipe is really easy because you can basically just eyeball everything and it will still turn out šŸ˜‚ you could also buy pre-cut butternut squash and brussel sprouts to make things even easier.

This recipe also makes for great leftovers! Sometimes I will even make this dish as a part of my normal meal prep and use it as a side for quick meals all week!

Maple Roasted Squash & Brussels

Course: Appetizer, Main Course, Side Dish

Ingredients

  • 1 lb brussel sprouts
  • 1/2 butternut squash (large)
  • avocado oil
  • pink salt
  • cinnamon
  • maple syrup
  • nuts of choice (pecans, cashews, etc.)
  • dried fruit of choice (cranberries, chopped dates, raisins, etc.)

Instructions

  • Preheat oven to 400F.
  • Peel and de-seed squash. Slice into cubes. Lay cubes out on a parchment paper lined baking tray and drizzle with avocado oil, pink salt, and cinnamon. Toss to coat squash evenly.
  • Wash brussel sprouts, trim ends, and slice in half. Drizzle avocado oil and pink salt and toss together to coat evenly. Arrange face-down on a parchment paper lined baking sheet.
  • Bake both the squash and brussel sprouts for 20-25 minutes or until the bottom sides starts to get slightly crispy. Flip and bake another 10 ish minutes. Let cool.
  • Combine brussels, squash, and dried fruit/nut of choice in a large bowl. Sprinkle with more cinnamon and pink salt to taste. Drizzle with a good amount of maple syrup and mix one more time!
