This Cottage Cheese Microwave Brownie is gluten free, low sugar, low carb, and high in protein. For moments when you have a chocolate craving and need to satisfy that sweet tooth in a pinch, this single-serve recipe is for you. It’s perfectly gooey, soft texture and rich chocolate flavor are everything you could ever want in an easy brownie recipe!
By now, you probably can tell how much I love single-serve recipes based on all of the options on my blog. They’re super easy to make, require minimal ingredients, taste delicious, AND have a fraction of the clean up if I were to make a full batch of something. Sometimes a craving hits and needs to be satisfied ASAP but the thought of taking the time to get out a ton of ingredients, mix, bake, and wait for an entire batch just doesn’t sound the best. Anyone else agree?? 🙋♀️
That’s where single-serve recipes come in handy. Some of my favorites that I make all the time are my Two Minute Protein Cookie, Sugar Cookie Baked Oatmeal, Single-Serve Pumpkin Cookie, and now this high protein brownie! I’ve tried a lot of higher protein versions of favorite treats made with cottage cheese and this is by far one of my favorite out of all that I’ve tried. I love a brownie that’s slightly undercooked and has a gooey center like a lava cake but with slightly firm edges. This brownie has all of that but can be cooked a little longer if you want a firmer brownie! Either way you prefer it, this chocolatey high protein goodness in a dish might just become your new go-to (I’ve already memorized it from making it so many times 🙈).

- Single-serve – It’s the perfect portioned dessert or sweet treat without having to make a full batch because the recipe makes a single serving. This one serving has 18g of protein!
- Only five ingredients – The only ingredients you’ll be needing are an egg, some cottage cheese, monk fruit sweetener, unsweetened cocoa powder, and chocolate chips.
- Balanced to satisfy cravings – This brownie is higher protein and full of healthy fats from the cottage cheese and egg. Having this with the lower carb sweetener makes a good blood sugar balancing combo.
- Dietary friendly – This is gluten free, high protein, low carb, and refined sugar free depending on the ingredients you use.
What You’ll Need
- Egg
- Cottage cheese – I love using the full-fat cottage cheese from Good Culture, it’s a weekly staple of mine.
- Unsweetened cocoa powder – Cacao powder would also work, it will just be a little more bitter!
- Monk fruit – I like using this to keep this brownie lower in sugar but you can use any granular sweetener (coconut sugar, raw sugar, etc.)
- Chocolate chips – You can use regular chocolate or dairy free, refined sugar free depending on your preferences. I love these mini chocolate chips for mine.
How To Make
- Lightly grease a mini ramekin or small dish with oil.
- In a high-speed blender, add all ingredients except chocolate chips and blend until smooth.
- Pour batter into the small dish and top with chocolate chips.
- Microwave for 1.5-2 minutes until desired firmness. Enjoy! (Tip: If you want a gooey center, cook for 1.5 minutes, if you want it to be more firm then cook closer to 2 minutes!)

Hi Sheri! You would use the same amount of raw sugar as what’s in the recipe – it’s another granulated sugar so that makes swapping it out easier. Hope this helps!
You can get Monk fruit without Erithitrol.I haven’t used raw sugar for three years

I tried this recipe tonight, as a sweet treat for my mother and I. We both have diabetes and have to watch our sugar. We were both craving something sweet after dinner and I needed to use the cottage cheese I had in the fridge.. I have to say, this brownie turned out delicious! I think it would benefit from a pinch of sea salt which I will add next time. Thank you for posting!
