This cottage cheese microwave brownie is gluten free, high protein, low sugar, low carb, and delicious. In a small white ramekin is a freshly baked brownie, pillow soft gooey texture and a dark rich chocolate color with slightly melted chocolate chips on top. Flakey sea salt is scattered on top for extra flavor.

Cottage Cheese Microwave Brownie (Gluten Free, High Protein)

Ingredients

  • 1 egg
  • 1/3 cup cottage cheese
  • 3 tbsp cocoa
  • 3 tbsp monk fruit
  • chocolate chips

Instructions

  • Lightly grease a small ramekin (or dish) with oil.
  • In a high speed blender, add all ingredients except chocolate chips. Blend until smooth.
  • Pour the brownie mixture into the dish and top with chocolate chips.
  • Microwave 1.5-2min until desired firmness. Enjoy!
