Paleo Chocolate Protein Mug Muffin

20 grams protein… almost 0 grams sugar… soooo this recipe is basically chocolate cake that’s acceptable to eat post-workout. I mean, it doesn’t get much better than that!

I use Ancient Nutrition Chocolate Bone Broth Protein and I have found that this protein creates the perfect texture with just the right amount of sweetness.

BUT, I have also had many followers message me saying they’ve used different brands of chocolate protein and they work just as well!

Post-mix, pre-microwave!

I eat this mug muffin for a quick breakfast, a snack, or even dessert. THAT’S how good it is! Hope you guys love it!

Paleo Chocolate Protein Mug Muffin

Ingredients

  • 1/2 scoop (approx. 12-13g) chocolate protein powder
  • 2 tbsp coconut flour
  • 2 tbsp cocoa or cacao powder (unsweetened)
  • 1 organic egg
  • 1/4 tsp baking powder
  • 1/4 cup water

Instructions

  • Whisk all ingredients together in a small bowl.
  • Coat mug in a thin layer of oil or butter (I typically use avocado oil spray).
  • Transfer batter into mug.
  • Microwave 1 minute and 30 seconds – 2 minutes or until fully cooked through (cooking time may vary based on microwave).
  • Add toppings! Here, I used peanut butter and dark chocolate chips. Delish!

*I use Ancient Nutrition Chocolate Bone Broth Protein which makes the consistency ah-mazing and gives it the perfect amount of sweetness.

    I know that you’ve mentioned using collagen protein in your most recent blog post — more specifically, the Ancient Nutrition multi collagen chocolate protein powder. Could I use this instead of the Ancient Nutrition chocolate bone broth protein?

    And if you have both the collagen and bone broth chocolate proteins, which ones do you use and when? Why? Thank you!

    • Hi! Yes, you can. The collagen just dissolves a little bit more so you may have to add a bit more. I mainly use the collagen in coffee and the bone broth protein in smoothies and recipes. I hope that helps!

    Tasty mug cake! I don’t love the taste of the ancient nutrition chocolate bone broth protein, the stevia sweetness and smell is off putting to me. This doesn’t completely hide that flavor but it would if you drizzled the right toppings on 🙂 Thanks.
