Christmas Cookie Baked Oatmeal

This Christmas Cookie Baked Oatmeal is gluten-free, dairy-free, low in sugar, and made with a few simple ingredients (that you probably already have on hand!). It’s the perfect cozy breakfast to really get you in the holiday spirit 😊

This baked oatmeal is super well-rounded with complex carbohydrates from the banana and oats, healthy fat from the nut milk and coconut yogurt, and protein from the egg. It’s the perfect breakfast or afternoon pick me up!

I love baked oatmeal recipes because it’s basically oatmeal in muffin form. Who doesn’t want a warm giant cake-y muffin for breakfast?!

What you need to make Christmas Cookie Baked Oatmeal…

  • oatsβ€” of course! I typically use sprouted oats organic for easier digestion and to avoid glyphosate but any rolled oats will do!
  • 1/2 bananaβ€” the spottier the banana, the better. This is a key sweetener in this recipe and spottier bananas are much sweeter than green/just ripe bananas.
  • 1 eggβ€” for added protein and to create a muffin-like texture. Many readers have said that you can also use a flax egg to make this recipe vegan.
  • milk of choiceβ€” I typically used homemade cashew milk or coconut milk but feel free to swap in your preferred milk! Oat, almond, coconut, or regular milk will all work great.
  • maple syrupβ€” as a sweetener. Feel free to sub in your preferred sweetener.
  • almond extractβ€” optional but this will give the “sugar cookie” flavor!
  • a pinch of salt
  • baking soda
  • coconut yogurtβ€” I love using a vanilla coconut yogurt for frosting but feel free to use whatever type of frosting you like! A little bit of the real thing never hurt anyoneβ€” even at breakfast time πŸ˜‰
  • Christmas sprinklesβ€” optional, but so fun! I used all natural sprinkles that I found at Whole Foods.

Christmas Cookie Baked Oatmeal

Ingredients

  • 1/2 cup oats
  • 1/2 spotty banana
  • 1 egg
  • 1 tbsp maple syrup (or whichever sweetener you prefer)
  • 1/4 tsp almond extract
  • 1/4 tsp baking soda
  • pinch sea salt
  • 1/4 cup milk (of choice)

Toppings

  • yogurt (greek or non-dairy works)
  • Christmas sprinkles

Instructions

  • Preheat oven to 350F and lightly grease a baking dish.
  • Add all ingredients to a blender and blend until fully combined.
  • Pour batter into baking dish. Bake for about 25-30 minutes.
  • Let cool and top with frosting and sprinkles!
