These Chocolate Peanut Butter Date Cups are gluten free, dairy free, vegan, and refined sugar free. They’re made with only five simple ingredients and the only hardest part is waiting for them to set in the freezer. The hard chocolate shell and smooth peanut butter caramel center makes every bite perfection, you won’t believe there’s no added sugar!

If you’ve tried and liked the Viral Date Bark, you’re going to love these cups. The ingredients are very similar but the method is completely different, more fun, but just as easy! Instead of spreading everything on a baking sheet into a flat layer, we’re putting them in a mini muffin pan to create cups. I love using this silicone mini muffin mold for the perfect bite-sized treats – like smaller Reese’s cups but with a snickers taste!

The classic chocolate and peanut butter combination is taken up a notch when it’s paired with the dates which give these bites a rich, caramel flavor. Unlike the bark, where everything is added in layers, the peanut butter and dates are blended together to create a thick filling that tastes like a sweet peanut butter caramel 😍 Have I convinced you that you need to try these ASAP yet?

Not only are these super easy to make, but you only need five ingredients that you might already have on hand. Thanks to the sweetness of the medjool dates, there’s no need for added sweetener or sugars. Depending on what chocolate chips you use these can be completely refined sugar free! There’s also a nice balance of high-fiber carbs and healthy fats so there’s a lower chance of a blood sugar spike. Which can be hard to come by in a sweet treat! If you wanted to add a little extra protein, you could always add a scoop or two of unflavored collagen to the blended mixture.

What You’ll Need

How To Make

  1. Remove the pits from the dates. Add pitted dates to a bowl or cup and add hot water to fully cover them. Let them soak for ten minutes and then drain the water.
  2. Add the dates and peanut butter to a blender or food processor and mix until fully combined. A thick, smooth mixture should form. (Tip: If it’s too sticky, set it in the freezer to firm a bit.)
  3. In a small bowl, add the chocolate and coconut oil to a bowl and microwave for thirty seconds, stir, and repeat until fully melted and smooth.
  4. Add liners to a mini muffin pan or use a silicone mini muffin mold. Add a small amount of chocolate to the bottom of each cup, spreading a little up the sides.
  5. Add a small spoonful of the date, peanut butter mixture on top of the chocolate.
  6. Pour more chocolate on top and if you’d like, sprinkle some sea salt on top of each.
  7. Freeze for at least two hours and enjoy!
