Low Sugar Chocolate Peanut Butter Granola

If you know me, you know that if both chocolate and peanut butter are involved… I don’t care what it is… count me in πŸ™‹

I can’t believe this is my first homemade granola recipe because let me tell you… IT IS SOOOO EASY TO MAKE YOUR OWN.

Here is what your granola should look like before baking. You want to press it down as thin as possible while still keeping it all together so that clusters will form.

Reasons to make your own granola:

  • it’s cheaper
  • it’s fun (hello, social distancing!)
  • control of ingredients (no inflammatory oils, you can control the amount of sugar, etc.)
  • HOMEMADE ALWAYS TASTES BETTER (!!!!)
After baking and breaking it apart. I like to leave some larger clusters!

This Chocolate Peanut Butter Granola is sweetened only with a touch of honey and has hemp seeds added for an extra plant-based protein boost! I have been munching on it plain mostly (yes, it’s that good) but also love it on top of yogurt or in a bowl with homemade cashew milk and banana slices. DELICIOUS.

Low Sugar Chocolate Peanut Butter Granola

Ingredients

  • 2 cups old fashioned rolled oats
  • 1/4 cup hemp seeds
  • 1/4 cup peanuts
  • 3 tbsp cocoa powder (unsweetened)
  • 1/2 cup peanut butter (only ingredient should be peanuts or peanuts and salt)
  • 1/4 cup honey
  • 2 tbsp coconut oil
  • sprinkle sea salt

Instructions

  • Line a baking tray with parchment paper and preheat oven to 300F.
  • Combine oats, hemp seeds, peanuts, cocoa powder, and sea salt in a large mixing bowl.
  • Add your peanut butter, coconut oil, and honey to a small pot on the stovetop. Stir over low heat just until everything is fully melted.
  • Add your wet ingredients to your dry ingredients and mix until everything is fully coated.
  • Press mixture down onto parchment paper as thin as possible while still keeping it all together. This will help to make clusters! See pictures above.
  • Bake for 8-10 minutes or until you start to notice the edges getting slightly crispy. Flip (trying to keep as big of clusters as possible) and bake another 5-8 minutes. Keep a close eye on it so that it doesn't burn! πŸ™‚
  • Let cool completely and then you can either keep the large clusters or break it down into smaller pieces like traditional granola. I personally like the big clusters!
