Chocolate Peanut Butter Date Cups (Gluten Free, Vegan)

Ingredients

  • 15 medjool dates (pitted)
  • 1/4 cup peanut butter (or any nut, seed butter)
  • 1.5 cups chocolate chips
  • 1 tbsp coconut oil
  • sea salt (for topping)

Instructions

  • Remove pits from the dates.
  • Add pitted dates to a bowl or cup and add hot water to soften. Let soak 10 min and drain water.
  • Add dates and peanut butter to a blender or food processor and mix until fully combined. If mixture is too sticky, set in the freezer to firm.
  • Add chocolate and coconut oil to a bowl and microwave for 30 sec, stir, and repeat until melted and smooth.
  • Add liners to a mini muffin pan (or use a silicone pan) and add a small amount of chocolate to the bottom of each cup , spreading some up on the sides.
  • Add a small spoonful of date peanut butter mixture on top of the chocolate.
  • Add more chocolate on top of each cup. Option to add sea salt on top.
  • Freeze for at least 2 hours. Enjoy!
