Add pitted dates to a bowl or cup and add hot water to soften. Let soak 10 min and drain water.
Add dates and peanut butter to a blender or food processor and mix until fully combined. If mixture is too sticky, set in the freezer to firm.
Add chocolate and coconut oil to a bowl and microwave for 30 sec, stir, and repeat until melted and smooth.
Add liners to a mini muffin pan (or use a silicone pan) and add a small amount of chocolate to the bottom of each cup , spreading some up on the sides.
Add a small spoonful of date peanut butter mixture on top of the chocolate.
Add more chocolate on top of each cup. Option to add sea salt on top.
