Chocolate Chip Oatmeal Energy Balls

I love whipping up a batch of these to have on hand for a little pre-workout snack or any time my sweet tooth kicks in!

The base is gluten-free, dairy-free, and refined-sugar free so you really can’t go wrong with which time of the day you decide to munch on a few! Sometimes I’ll even have a couple with my coffee first thing in the morning 😉

Chocolate Chip Oatmeal Energy Balls

Ingredients

  • 1 & 1/2 cups oats (I use sprouted!)
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil* (melted then cooled)
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips

Instructions

  • Blend everything besides chocolate chips in a food processor.
  • Stir in chocolate chips.
  • Roll into balls (I used a cookie scoop so they would all be about the same size).
  • Store in the fridge or freezer! I personally prefer the freezer 🙂

Notes

*use refined coconut oil if you don’t want a coconut taste
