Brownie Batter Steel-Cut Oats (Vegan, Refined Sugar Free)

It’s the start of the new year and many people have resolutions around healthier eating habits. But they think healthier means a lack of flavor, fun, or deliciousness. Well, I don’t agree! This recipe right here is a PERFECT example of how healthier, good-for-you recipes can taste amazing AND keep you satisfied.

I’m sure you’ve had regular oats for breakfast, they’re a staple for a lot of people, but have you tried steel-cut oats? These oats might take a little longer to put together but I think it’s SO worth it! The end result is much creamier, thicker, and more satisfying.

For this recipe, adding a few simple ingredients (chocolate being the main character) makes a treat that tastes just like brownie batter! But you’ll have to try for yourself to see πŸ˜‰

A great hack is making a big batch at once and storing in the fridge so you have healthy breakfasts and snacks ready to go for the week. Use this as a base and then add whatever toppings you’re in the mood for!

What you’ll need to make Brownie Batter Steel-Cut Oats:

  • Water
  • Salt
  • Steel-cut oatmeal – I use Bob’s Red Mill
  • Coconut sugar – for added sweetness.
  • Cocoa powder – cacao powder works too but you might need to add more sweetener

Brownie Batter Baked Oatmeal

Ingredients

  • 2 & 1/4 cup water
  • 1 pinch salt
  • 3/4 cup steel-cut oatmeal
  • 3 tbsp coconut sugar
  • 3 tbsp cocoa powder

Optional: add a scoop of protein powder. add toppings of your choice!

    Instructions

    • Bring water and salt to a boil.
    • Add oats.
    • Simmer for 25 mins (stirring every once in awhile). Add more water if it’s sticking.
    • Remove from heat and stir in sweetener and cocoa powder (I also like to add a scoop of protein powder!)

    Optional: add toppings! I love greek yogurt, nut butter, and more chocolate.
