Birthday Cake Banana Bread

In honor of my birthday, I am sharing birthday cake recipes over on my Instagram all week long! My favorite so far being this Birthday Cake Banana Bread— you guys, it seriously just tastes like straight up normal cake but is gluten-free, dairy-free, made with much less sugar, and to be honest is super easy to make!

This Birthday Cake Banana Bread is a spin-off of my absolute favorite Healthy Banana Bread recipe— I made a few additions to birthday cake-ify it and they made ALL the difference. Even my husband said “this tastes like real cake” as he ate his first slice!

Other than eating my birthday cake banana bread and making fun birthday cake recipes all week, my birthday has been pretty relaxed. My husband Matt had a work trip in San Diego for a couple of days so I’ve just been hanging with friends and family all week. I typically lean more towards treating my birthday as just a regular day but this year I decided to give myself the day off work.

To celebrate my birthday, I had myself a slow morning with a coconut milk latte, avocado toast, online shopping, and browsing Pinterest. Then I went for a walk with my friend Hannah and grabbed a smoothie at our favorite organic juice shop Clean Juice. Then I went shopping with my mom at HomeGoods to look at Halloween decorations and house things… is it too early to be thinkng of Fall and Halloween??? It never feels to early to me as Fall is my favorite season SMILEY

I found some super cute decorations and then just hungout at my mom’s house and had a fam dinner which always involves some craziness. My mom made one of my favorite meals that she makes— a sheet pan meal with roasted chicken drumsticks, carrots, and cauliflower. I need to re-make and post on the blog soon because it is SO easy and so delcious! She also made an organic, gluten-free cake that was amazing (another recipe I need to eventually get on the blog!). The day ended by watching miss Lottie play with my friend’s new puppy which was hilarious and so cute.

I went home and watched some Married At First Sight… has anyone seen?!?! It’s odd but very entertaining and then called it a night! A pretty ideal birthday in my book— chill but fun!

Anyways back to the banana bread…

What you will need to make Birthday Cake Banana Bread:

  • spotty bananas— as usual, spotty is key! They are a main sweetener in this recipe.
  • oat flour— oats, blended into a flour-like consistency. I make my own at home in the blender but you can also buy oat-flour at many grocery stores or on Amazon if you don’t have a high-speed blender.
  • eggs
  • coconut sugar— feel free to use regular sugar. I use a very small amount because a lot of sweetness comes from the frosting! If you are skipping the frosting, I would double the amount of sugar listed.
  • oil— I use avocado oil. Butter, vegan butter, or coocnut oil will all work as well (melt and then cool if using one of these!).
  • vanilla extract and almond extract— this is major key in the birthday cake flavor!
  • salt
  • baking soda
  • rainbow chips or sprinkles— optional but so fun! I found all natural rainbow chips on amazon (the brand is supernatural) but feel free to use regular sprinkles instead or skip this part all together!

For the frosting you will need:

  • butter or vegan butter
  • powdered sugar
  • milk of choice— I used cashew milk.

Birthday Cake Banana Bread

Ingredients

  • 3 spotty bananas
  • 2 cups oat flour
  • 2 eggs
  • 1/4 cup coconut sugar (use 1/2 cup if omitting frosting)
  • 1/4 cup oil (I use avocado oil)
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cup rainbow chips or sprinkles (optional, if using sprinkles use 1/4 cup)

For the frosting

  • 2 tbsp butter or vegan butter (softened)
  • 3/4 cup powdered sugar
  • milk of choice— start with a tiny splash and keep adding slowly until you reach desired consistency (I used cashew milk)

Instructions

  • Preheat oven to 350F and line a loaf pan with parchment paper.
  • In a large bowl, mash bananas with a fork. Next, add all ingredients except chocolate chips and mix well.
  • Stir in chocolate chips or sprinkles and pour into loaf pan.
  • Bake for 45-55 minutes. Let cool completely. Mix together frosting ingredients using a silicone spatula or electric mixer.
  • Add frosting and extra sprinkles, slice, and enjoy!
