Birthday Cake Banana Bread

spotty bananas

oat flour

eggs

coconut sugar
(use 1/2 cup if omitting frosting)

oil
(I use avocado oil)

vanilla extract

tsp
almond extract
1/4
tsp
salt

tsp
baking soda

cup
rainbow chips or sprinkles
(optional, if using sprinkles use 1/4 cup)
For the frosting

tbsp
butter or vegan butter
(softened)

cup
powdered sugar
milk of choice— start with a tiny splash and keep adding slowly until you reach desired consistency
(I used cashew milk)
Instructions
Preheat oven to 350F and line a loaf pan with parchment paper.
In a large bowl, mash bananas with a fork. Next, add all ingredients except chocolate chips and mix well.
Stir in chocolate chips or sprinkles and pour into loaf pan.
Bake for 45-55 minutes. Let cool completely. Mix together frosting ingredients using a silicone spatula or electric mixer.
Add frosting and extra sprinkles, slice, and enjoy!
