Birthday Cake Banana Bread

Ingredients

  • 3 spotty bananas
  • 2 cups oat flour
  • 2 eggs
  • 1/4 cup coconut sugar (use 1/2 cup if omitting frosting)
  • 1/4 cup oil (I use avocado oil)
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cup rainbow chips or sprinkles (optional, if using sprinkles use 1/4 cup)

For the frosting

  • 2 tbsp butter or vegan butter (softened)
  • 3/4 cup powdered sugar
  • milk of choice— start with a tiny splash and keep adding slowly until you reach desired consistency (I used cashew milk)

Instructions

  • Preheat oven to 350F and line a loaf pan with parchment paper.
  • In a large bowl, mash bananas with a fork. Next, add all ingredients except chocolate chips and mix well.
  • Stir in chocolate chips or sprinkles and pour into loaf pan.
  • Bake for 45-55 minutes. Let cool completely. Mix together frosting ingredients using a silicone spatula or electric mixer.
  • Add frosting and extra sprinkles, slice, and enjoy!
