This Key Lime Pie Mousse is gluten free, high in protein, low in sugar, and doesn’t require any baking. It’s made with only three main ingredients, packed with 28 grams of protein per serving 🤯, and has the fluffy texture and zingy flavors of key lime pie filling!
I don’t know about you, but when the weather starts to get warmer I start craving all of the fresh ingredients and light flavors. To me, key lime pie screams Spring and Summer so I wanted to make a recipe that was easier than making a whole pie but still had the same flavors! That’s EXACTLY what this recipe is 🙌
This would be perfect to make multiple servings of, prepped and ready to go as a quick snack or dessert option stashed in your freezer!

What You’ll Need
Cottage cheese
Sweetener of choice – I like using powdered monk fruit, maple syrup, or honey.
Lime – zest and the juice.
Optional toppings – white chocolate chips or crushed graham crackers have been my favorites!
How To Make
Start by adding all of your ingredients (except for optional toppings) to a high speed blender cup. Blend until completely smooth. You may need to stop and scrape the sides a couple of times to make sure that everything is blending together!
Next, transfer the mixture to a small dish and smooth out the top. Place this in the freezer for about an hour. The consistency should be almost like ice cream or frozen yogurt!
Enjoy by itself or take it up a notch (my favorite 💁♀️). Melt white chocolate chips by adding a spoonful of coconut oil and microwaving for 30 seconds, stir, and repeat until smooth. Spread an even layer on top of the mousse. Place in the freezer for a few minutes for the chocolate to set. Then top with crushed graham crackers and more lime zest! I’ve been loving the Simple Mills sweet thins for a gluten free, minimal ingredient graham cracker alternative.

Wow! This really is good! Very creamy and could even eat just as a dip with graham crackers. 🙂
