Hot Cocoa Baked Oatmeal

This Hot Cocoa Baked Oatmeal is vegan, gluten-free, super easy to make, and so festive!

Every time I share a baked oatmeal recipe, I recieve at leastttt a few requests for an egg-free option… you guys asked and I am delivering! I was worried that the baked oatmeal wouldn’t come out as fluffy without an egg but I have to say, I was so wrong! I am actually sad it took me this long to come up with an egg-free blended baked oatmeal recipe because it turned out UNREAL! So fluffy and cake-like DROOL next up, I’ll come up with a banana-free option as that is another popular request.

I love making baked oatmeal because it feels like I am eating a big, warm, delicious, muffin for breakfast but it’s actually just as filling and balanced as a bowl of oatmeal! I also love having it as an afternoon snack or even a before bed treat!

This Hot Cocoa Baked Oatmeal is so nostalgic and brings me all of the wintery holiday feels!

Here’s what you need to make Hot Cocoa Baked Oatmeal:

  • oats— I typically use sprouted oats organic for easier digestion and to avoid glyphosate but any rolled oats will do!
  • 1/2 banana— the spottier the banana, the better. This is a key sweetener in this recipe and spottier bananas are much sweeter than green/just ripe bananas.
  • milk of choice— I typically used homemade cashew milk or coconut milk but feel free to swap in your preferred milk! Oat, almond, coconut, or regular milk will all work great.
  • maple syrup— as a sweetener. Feel free to sub in your preferred sweetener. 
  • cocoa powder— cacao powder works too! Just make sure you use unsweetened.
  • a pinch of salt
  • baking soda
  • optional— marshmallows (vegan if needed), melted chocolate for drizzle, crushed candy cane for topping

Ingredients

  • 1/2 cup oats
  • 1/2 banana (spotty)
  • 1 tbsp maple syrup (or sweetener of choice)
  • 1 tbsp cocoa powder (or cacao powder)
  • 1/4 tsp baking soda
  • Pinch sea salt
  • 1/4 cup milk of choice

Optiona toppings

  • marshmallows (vegan if needed)
  • chocolate chips (melted, for a chocolate drizzle)
  • crushed cany canes

Instructions

  • Preheat oven to 350F and lightly grease an oven safe baking dish.
  • Add all ingredients (except toppings) to a blender and blend until fully combined.
  • Pour batter into baking dish and bake for 10 minutes, add marshmallows (optional), and bake for another 8-10 minutes.
  • Let cool and add other toppings of choice!
