This easy healthy single serve brownie baked oatmeal is gluten free, dairy free, nut free, refined sugar free, and naturally sweetened. In an 8 ounce white ramekin dish is freshly baked oatmeal that's a rich chocolate brown color, risen, with crinkled tops. Topped with flakey sea salt and with chocolate chips poking through and slightly melted. The inside texture is shown to be fluffy, soft, pillowy, and like a moist cake.

Single-Serve Brownie Baked Oatmeal (Gluten Free, Dairy Free)

Ingredients

  • 1/3 cup oats
  • 1/2 banana (the spottier, the better!)
  • 1 egg
  • 1/4 cup milk of choice (I like using almond, oat, and cashew milk)
  • 1 heaping tablespoon cocoa powder
  • Pinch salt
  • 1/4 tsp baking soda
  • chocolate chips

Instructions

  • Preheat oven to 350F and lightly grease an oven-safe baking dish.
  • Add all ingredients (except chocolate chips) to a blender and blend until fully combined.
  • Pour batter into baking dish, top with chocolate chips and bake for about 15 minutes.
  • Top with flakey sea salt (optional) and enjoy!
