Course: Dessert, Snack
Keyword: balls, chocolate, chocolate chip, cookie dough, dairy free, dessert, easy, energy balls, energy bites, freezer, gluten free, healthy, no bake, paleo, plant based, snack, vegan, vegetarian

Ingredients

For the cookie dough balls

  • 1 & 1/4 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil (melted + cooled)
  • 2 tbsp milk of choice (I used oat milk)
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • 1/3 cup chocolate chips

For the chocolate coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Let all ingredients come to room temperature.
  • Mix all ingredients except chocolate chips. Fold in 1/3 cup chocolate chips.
  • Set bowl in the freezer for 10 minutes (this will make it easier to roll into balls).
  • Roll dough into balls (about 1 heaping tbsp each) and set in the freezer for at least 1 hour.
  • Melt 1 cup chocolate chips and 1 tsp coconut oil in the microwave in 30 second intervals, stirring between each.
  • Dip each cookie dough ball into melted chocolate and set onto a parchment paper-lined plate. Top with sea salt and set back into the freezer for at least 1-2 hours.
