Copycat Starbucks Egg Bites (Gluten Free)

carton egg whites
(or 2 cups)
2/3
cup
cottage cheese
1/2
cup
monterey jack cheese
(shredded, sub cheese or use dairy free)
1/4
cup
roasted red peppers
(diced)
1/2
cup
spinach
(finely chopped)
salt & pepper
(to taste)
Instructions
Preheat oven to 300F. Fill a baking dish with 1 inch of water and place on the bottom rack.
Blend together egg whites, cottage cheese, shredded cheese, salt, and pepper until smooth.
Lightly spray / grease a muffin pan with oil. Pour egg white mixture into each muffin tin.
Top with red peppers and spinach.
Bake 25-30 min or until the eggs are set. Let cool, remove from pan, and enjoy!
