Copycat Starbucks Egg Bites (Gluten Free)

Ingredients

  • 1 16oz carton egg whites (or 2 cups)
  • 2/3 cup cottage cheese
  • 1/2 cup monterey jack cheese (shredded, sub cheese or use dairy free)
  • 1/4 cup roasted red peppers (diced)
  • 1/2 cup spinach (finely chopped)
  • salt & pepper (to taste)

Instructions

  • Preheat oven to 300F. Fill a baking dish with 1 inch of water and place on the bottom rack.
  • Blend together egg whites, cottage cheese, shredded cheese, salt, and pepper until smooth.
  • Lightly spray / grease a muffin pan with oil. Pour egg white mixture into each muffin tin.
  • Top with red peppers and spinach.
  • Bake 25-30 min or until the eggs are set. Let cool, remove from pan, and enjoy!
