What You’ll Need

This healthy two minute protein brownie is gluten free, refined sugar free, low carb, low sugar, and high protein. In a clear microwave safe dish, the brownie is a dark rich chocolate color. Soft pillowy texture is shown through the top of the brownie and a gooey center. It's topped with drizzle of peanut butter, a dollop of greek yogurt, and more chocolate chips for added flavor and texture.

How To Make

  1. In a small bowl, mix all of the ingredients except chocolate chips together. Then, add in the chocolate chips.
  2. Lightly grease a small microwave safe dish. (Tip: I used a glass food storage container like this one.)
  3. Pour the batter into the dish and smooth it out.
  4. Microwave for 90 seconds if you want more of a lava cake, under-cooked center then you can start adding toppings. If you want it to be a little more baked, microwave in ten-second intervals until your desired doneness. (Tip: Microwaving anywhere from 90-120 seconds is the best method!)
  5. Add toppings of choice – Greek yogurt, peanut butter, chocolate chips, whipped cream, ice cream, berries, etc. Enjoy!

Two Minute Protein Brownie (Gluten Free, Single-Serve)

  • 1 egg
  • 1/3 cup Greek yogurt
  • 1 tbsp sweetener of choice (see above for examples)
  • 3 tbsp cocoa powder (or cacao)
  • 1 tbsp chocolate protein powder
  • chocolate chips (add as many as you like!)

Instructions

  • Mix all ingredients except for chocolate chips until smooth. Then add chocolate chips and mix again.
  • Lightly grease a small microwave safe dish. Pour the batter into the dish.
  • Microwave for 90 seconds for a lava cake consistency or up to 120 seconds for a firmer brownie.
  • Add toppings of choice and enjoy!
