Why You’ll Love This
- It’s TWO ingredients – This recipe has two ingredients aside from optional seasonings and your choice of toppings!
- Single serve – This makes one wrap and is perfect for any meal or snack.
- Packed with protein – Eggs and cottage cheese add extra protein and healthy fats to this simple wrap making it more satiating. Add more protein with your wrap fillings by adding turkey slices, chicken, tuna, chickpeas, beans, etc.
- Dietary friendly – This wrap is naturally gluten free, low carb, keto, and high in protein.
What You’ll Need
- Cottage cheese – I find full-fat cottage cheese like this one from Good Culture works best in most cottage cheese based recipes!
- Eggs
- Seasonings of choice – You can leave this plain with a little added salt and pepper or change up the spices. I used garlic powder and Italian seasoning for this!
- Wrap ingredients of choice – Make whatever kind of wrap you like! In this recipe, I used banana peppers, tomato, lettuce, turkey slices, avocado, mustard, salt and pepper.
How To Make
- Preheat oven to 350F and line a medium baking sheet with parchment paper.
- In a high-speed blender, blend the eggs, cottage cheese, and seasonings together until smooth.
- Lightly spray the parchment paper lined tray, then pour the mixture on top. Use the back of a spoon to spread it evenly into a rectangle shape. (Tip: It can take up the entire baking sheet depending on what size you use!)
- Bake it in the oven for about 30 minutes until the crust is slightly golden.
- Let the wrap cool completely before carefully lifting it off of the parchment paper to make your wrap. Place on a plate or cutting board.
- Make your wrap by using whatever ingredients you want!
- Gently fold up your wrap, slice in half, and enjoy!
