Three Ingredient Pumpkin Cookies (Gluten Free, Vegan)

These Pumpkin Cookies are SUPER easy to make, using only three ingredients, and they’re ready in less than twenty minutes! The fluffy, cake-like texture, pumpkin flavor, and melted chocolate chips make these the perfect fall treat.

We all love a quick dessert made with minimal ingredients to make and enjoy when that afternoon sweet tooth comes in. And that’s exactly why I’m OBSESSED with these cookies. They’re a viral recipe for a reason!

I’ve made these so many times since I first tried them, they’re perfect to prep for the week, bring to a get-together, or enjoy for an at-home date night. Honestly, whoever you share these with will think you put hours into the kitchen but they don’t have to know how easy it really was 😉

What You’ll Need

  • Cake mix – I used an Organic vanilla cake mix! The original recipe has spiced/pumpkin cake mix but this was amazing too.
  • Pumpkin puree
  • White chocolate chips – can be dairy-free.

How To Make

Preheat your oven to 350F and line a baking sheet with parchment paper or lightly grease with a spray oil.

In a large bowl, pour the entire bag of cake mix and the entire can of pumpkin puree and stir until smooth and fully combined. Because I used a vanilla cake mix, I added some ground cinnamon, but this is optional depending on what you’re using! Next, mix in your chocolate chips – no measurements here, just add what you want (if you’re like me… that’s a lot 😆).

Using a cookie scoop or spoon, form each cookie and place on the baking sheet. Leave some space between each in case they spread out a little! Option to place a few more chocolate chips on top of each. Bake for 15-17 minutes. Once done, let them cool and enjoy!

  • 1 box cake mix (vanilla, spiced, pumpkin, chocolate, etc.)
  • 1 can pumpkin puree
  • chocolate chips (can be dairy free)

Note: no specific measurement for chocolate chips, measure with your heart!

    Instructions
