Sugar Cookie Energy Bites

You guys, sugar cookies hold a such a special place in my heart that I had to make a version to store in the freezer so that they would be accessible at all times 🤣 it also helps that these are actually a healthy snack!

I used to LOVE those Lofthouse cookies that come out every season (I still do, I just don’t eat them quite as often now 😆) and these Sugar Cookie Collagen Balls remind me of them!

Made with simple ingredients, an added protein-boost from the collagen powder, healthy fat from the cashew butter, and even a little bit of fiber from the coconut flour… these are the PERFECT snack or treat.

Here is what your batter should look like before you roll it into balls. It’s soft but also easy to work with (aka not sticking to your hands!)

Sugar Cookie Collagen Balls

Ingredients

For the balls

  • 1/2 cup cashew butter
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 cup collagen powder
  • 2 tbsp coconut flour
  • sprinkle sea salt
  • 1 tbsp all natural sprinkles

For the icing (optional)

  • 1/4 cup white chocolate chips
  • 1/2 tbsp coconut oil
  • 1/2 tbsp almond milk

Instructions

  • Stir together cashew butter, maple syrup, vanilla extract, and almond extract.
  • Add in collagen powder, coconut flour, and sea salt and stir until well-combined. Next, stir in sprinkles.
  • Roll into balls and set on a plate. Set your plate in the freezer.
  • Melt white chocolate chips, coconut oil, and almond milk in the microwave in 30 second intervals, stirring between each. Drizzle mixture over the top of the sugar cookie balls and then add more sprinkles! Set back into the freezer for at least an hour.
  • Store in the refridgerator. You can also store in the freezer but you might need to let them thaw for a few minutes before eating 🙂
