What’s better than a regular cookie? A giant one that’s ALL for you! Even better is that this cookie is made with less than ten ingredients, comes together super quick, and is packed with protein. Each serving, depending on specific ingredients used, can have over 30g of protein! That’s how much I try to get in each meal minimum so for that to be in a simple snack or dessert is a huge win. Or if you’re feeling that afternoon sweet tooth kick in after a workout out, maybe swap out your usual protein shake for a protein cookie… I’ve definitely done that before 💁♀️
Like all of my cookie recipes, this giant cookie is firm on the outside with slightly crisp edges and a gooey, soft center that makes each bite a perfect balance. If you’ve ever bought protein cookies at the store, you’re never going to want to again after you try this! We’re ditching the long list of ingredients, additives, sugars, and who knows what else with simple, kitchen staple ingredients that are good for you and will leave you feeling better.

What You’ll Need
- Plain Greek yogurt – I prefer plain so there’s no added flavoring coming through and it adds to the softness of the cookie while adding protein! You can also try a thick dairy free yogurt like Cocojune or Culina.
- Nut butter – I use organic peanut butter for a peanut butter cookie but you can use any kind, the flavor will either be neutral or very subtle. If you use sunflower seed butter, your cookie might turn green but that’s okay – it’s just reacting to the baking powder!
- Vanilla protein powder – My favorite right now is from Flavcity (code: CALLA) , they have whey and plant based options.
- Baking powder
- Brown sugar – This adds a nice caramel flavor but you can use any granulated sweetener (monkfruit, coconut sugar, etc.)
- Vanilla extract
- Sea salt
- Chocolate chips – For giant cookies like this, I love mini chocolate chips because I can pack more in! I love any chocolate chips by Enjoy Life or Pascha.
How To Make
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, mix all ingredients except chocolate chips until a dough forms. Then fold in chocolate chips.
- Spread and form on the baking sheet in a large cookie shape.
- Bake for ten to twelve minutes or until slightly golden and firm. Enjoy!

Ingredients

- 2 tbsp nut butter
- 1 scoop vanilla protein powder (about 1/4 cup)
- 1 tsp baking powder
- 2 tbsp brown sugar (or granulated sweetener)
- 1 dash vanilla
- 1 pinch sea salt
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, mix together all ingredients except chocolate chips. Once a dough forms, fold in chocolate chips.
- Spread the dough on the parchment paper and form into a large cookie shape.
- Bake for 10-12 minutes until slightly golden and firm. Enjoy!
