This Single-Serve Giant Protein Cookie is gluten free, low carb, lower sugar, and made with simple ingredients. With the perfect slightly crisp outside and soft center that melts in your mouth, this might just become your new healthier treat obsession.

What’s better than a regular cookie? A giant one that’s ALL for you! Even better is that this cookie is made with less than ten ingredients, comes together super quick, and is packed with protein. Each serving, depending on specific ingredients used, can have over 30g of protein! That’s how much I try to get in each meal minimum so for that to be in a simple snack or dessert is a huge win. Or if you’re feeling that afternoon sweet tooth kick in after a workout out, maybe swap out your usual protein shake for a protein cookie… I’ve definitely done that before 💁‍♀️

Like all of my cookie recipes, this giant cookie is firm on the outside with slightly crisp edges and a gooey, soft center that makes each bite a perfect balance. If you’ve ever bought protein cookies at the store, you’re never going to want to again after you try this! We’re ditching the long list of ingredients, additives, sugars, and who knows what else with simple, kitchen staple ingredients that are good for you and will leave you feeling better.

You might be asking yourself, “why is everyone so obsessed with protein”? Clearly, there’s a lot in this cookie and in my other recipes. Protein is essential for so many things – muscle repair, immune function, keeping you full and satisfied. It also stabilizes blood sugar, reduces cravings, and keeps your energy levels steady. Since being more intentional with the amount of protein I’m consuming, I’ve noticed a huge difference in my health and every day routines! It’s not just for building muscle like people think, it’s really a building block for feeling a little better in so many different ways. So why not have some fun adding it in with delicious recipes!
