This Salted Caramel Cottage Cheese Ice Cream is gluten free, high in protein, and refined sugar free. It’s perfectly creamy and smooth with pieces of dates mixed in to give it the most delicious caramel flavor in every bite. The perfect sweet treat or snack for hot summer days!

It’s obvious by now that cottage cheese can be made into almost anything. From savory recipes like Breakfast Quiche and Pizza Bowls to sweet recipes like Chocolate Chip Cookies and Mini Cheescakes they’re all amazing and pack in a good amount of protein! One of my favorite ways to enjoy it recently (especially with how hot it’s been) is as an ice cream. I’ve been testing out some of my usual favorite flavors and have shared recipes for Strawberry Cheesecake and Mint Chocolate Chip. Now, we’re adding this delicious Salted Caramel ice cream to the rotation!

Ice cream is actually super easy to make at home, you don’t need an ice cream maker or Ninja Creami, just a high-speed blender and space in your freezer. The best thing about using cottage cheese instead of milk or non-dairy milk in these recipes is it adds such a creamy texture, a little saltiness, and instantly boosts the protein! Because everything is blended, you really can’t tell it’s made with cottage cheese, so it’s a great sneaky way to add more protein into your day to keep you full and satisfied.

What You’ll Need

How To Make

  1. Add cottage cheese, maple syrup, and sea salt to the cup of a high speed blender or food processor and blend until smooth.
  2. Add in the dates and pulse a few times to mix the pieces in. (Tip: We don’t want to fully blend the dates because these will taste like caramel chunks in the ice cream!)
  3. Pour the mixture into a medium-sized glass food container.
  4. Place the container in the freezer for at least two to four hours, stirring halfway through to prevent iciness. (Tip: I like mine more firm so I leave it in closer to four hours but if you want it more like soft serve, freeze for two.)
  5. Once set, scoop, serve, and enjoy!
