This healthy salted caramel cottage cheese ice cream is gluten free, high protein, refined sugar free, keto, low carb, low sugar, and clean eating. In a clear stemmed sundae cup is two scoops of ice cream. A creamy off white color with trails of dark caramel throughout and dark brown chunks of dates poking through for added texture. It's smooth, creamy, fluffy, and refreshing.

Salted Caramel Cottage Cheese Ice Cream (Gluten Free)

Ingredients

  • 1 cup cottage cheese
  • 3 tbsp maple syrup
  • 2 dates
  • 1 pinch sea salt

Instructions

  • Add cottage cheese, maple syrup, sea salt to blender or food processor. Blend until smooth.
  • Add in dates and pulse a few times. (Don't fully blend, you want pieces in the ice cream)
  • Pour into a medium glass container and place in the freezer for 2-4 hours. Stir halfway through freezing to prevent iciness.
  • Once set, scoop, serve, and enjoy!
