Pumpkin Protein Bars (Gluten Free, Dairy Free)

These pumpkin protein bars are SO easy to make and taste better than the protein bars you’d buy in stores (and with fewer ingredients)! They’re gluten free, dairy free, and refined sugar free. No time is needed to throw these together and they’re great for making ahead for your week as a grab-and-go snack or post-workout treat!

I have such a hard time finding protein bars at the store that are low in sugar, not filled with a ton of unnecessary ingredients, have a decent amount of protein, AND actually taste good. So that’s why I prefer to make my own 🤷‍♀️ I make a version of these every year and these have been my favorite so far!

What You’ll Need

Pumpkin puree

Nut butter – you’ll want to use a runnier nut/seed butter so it’s easy to mix. I love cashew butter!

Oat flour

Vanilla protein powder – I love this plant-based one or this grass-fed one!

Honey

Coconut oil – melted.

Pumpkin pie spice

Chocolate chips – I used white chocolate chips this time but also love with regular chocolate!

Sea salt

How To Make

Begin by mixing all of your protein bar ingredients in a bowl (everything but chocolate chips and some coconut oil). Combine until a smooth, dough-like consistency forms.

Next, line a loaf pan with parchment paper and press the dough in. It doesn’t need to be perfect, just pressed in a single layer!

Make your chocolate coating by melting chocolate chips and coconut oil in the microwave in 15-second intervals, stirring between each, until fully melted. Pour the melted chocolate over the protein bars and spread evenly.

Place in the freezer for at least 2 hours until fully set. Once done, slice into bars and enjoy!

Pumpkin Protein Bars (Gluten Free, Dairy Free)

Ingredients

  • 1/2 cup pumpkin puree
  • 1/3 cup nut butter
  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder (or more to desired consistency)
  • 3 tbsp honey
  • 2 tbsp coconut oil (melted)
  • 1 tbsp pumpkin pie spice
  • 1 pinch sea salt

Chocolate Topping

  • 1/2 cup white chocolate chips
  • 1 tsp coconut oil

Instructions

  • Mix together protein bar ingredients in a bowl.
  • Press dough into a parchment paper-lined loaf pan.
  • Melt chocolate chips and coconut oil in the microwave in 15 second intervals, stirring between each, until fully melted.

  • Freeze for at least 2 hours. Slice into bars and enjoy!
