These healthy, easy, pumpkin protein bars are gluten free, dairy free, refined sugar free, and can be vegan. The photo is of the bars lined on a brown parchment paper lined plate. Pumpkin Protein Bars (Gluten Free, Dairy Free)

Ingredients

  • 1/2 cup pumpkin puree
  • 1/3 cup nut butter
  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder (or more to desired consistency)
  • 3 tbsp honey
  • 2 tbsp coconut oil (melted)
  • 1 tbsp pumpkin pie spice
  • 1 pinch sea salt

Chocolate Topping

  • 1/2 cup white chocolate chips
  • 1 tsp coconut oil

Instructions

  • Mix together protein bar ingredients in a bowl.
  • Press dough into a parchment paper-lined loaf pan.
  • Melt chocolate chips and coconut oil in the microwave in 15 second intervals, stirring between each, until fully melted.
  • Pour melted chocolate over protein bars and spread evenly.
  • Freeze for at least 2 hours. Slice into bars and enjoy!
