Probiotic Cherry Pie Chia Pudding

The best way to start the day is with this Probiotic Cherry Pie Chia Pudding! This recipe is unreal simple and absolutely delicious!

All you need for this recipe is…

  • chia seeds
  • kefir (you can also use any nut milk but the ratio may change and the texture won’t be as creamy!)
  • cherries

THAT’S IT! I didn’t even need to add a sweetener because the kefir makes it SO CREAMY and the cherries add the perfect amount of natural sweetness. If you like things on the extra sweet side (hey, who doesn’t sometimes!), I recommend adding a spoonful of raw honey to your chia pudding mixture before shaking it up and letting it sit in the fridge.

To be honest, chia pudding has never been my faaaavorite (hence why I don’t already have a recipe for it) but I do love getting that extra fiber in the morning so I figured I’d give it another shot and seriously, kefir is the KEY 🔑 if you’re not a big chia pudding fan, you HAVE to try it this way!

Not to mention, the kefir adds TONS of probiotics and some healthy fat and protein to keep me fueled all morning long 🙌🏼

Probiotic Cherry Pie Chia Pudding

Ingredients

  • 2/3 cup kefir (I recommend organic whole milk kefir, I use the brand Lifeway)
  • 2 tbsp chia seeds
  • 1-1.5 cups cherries (pitted and stems removed)

Instructions

  • Add chia seeds and kefir to a jar with a tightly secured lid. Shake vigorously and set in the fridge overnight or for at least 1 hour.
  • Add cherries to a pan over the stovetop on medium heat. Once the cherries start to warm up, mash them with a fork or potato masher. Continue cooking and stirring until the mixture starts to bubble. You can do this step the night before and then store in a container in the fridge or right before you are planning to eat your chia pudding.
  • Layer chia pudding and no sugar-added cherry jam. Option to top with more cherries, almond butter, bee pollen, or anything else your heart desires!
