Pecan Pie Energy Bites

These Pecan Pie Energy Bites are paleo, vegan, made with only a handful of simple + clean ingredients, and they taste JUST LIKE pecan pie. Don’t ask how… just trust.

Pecans have a sweet, buttery flavor on their own (despite being full of fiber, healthy fat, and nutrients + minerals like copper, manganese, and zinc) so I really didn’t have to add much for this recipe to turn out super delish 👏🏼

I especially love these Pecan Pie Energy bites for a pre-workout boost, a post-lunch sweet treat, or an afternoon snack!

Pecan Pie Energy Bites

Ingredients

  • 5 medjool dates (pitted and soaked in hot water for 5 minutes to help soften)
  • 1.5 cups pecan pieces
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • dash sea salt

Instructions

  • Add 1 cup pecans (save the other 1/2 cup) and the rest of your ingredients to a food processor and blend until fully combined.
  • Stir in the other 1/2 cup pecans (so that you get some bigger pecan chunks in each bite!).
  • Spoon batter out and roll into balls (about 1 heaping tablespoon each).
  • Set onto parchment paper-lined plate or tray and set in the freezer for 2 hours.
  • Store in the freezer and you can enjoy at any time– no need to thaw!
