These Peanut Butter Chocolate Chip Oatmeal Cookies are gluten free, dairy free, and low in sugar. They’re made with simple ingredients and are the perfect blend of sweet and salty. With a crunchy outside and soft, gooey center, they’ll quickly become your new favorite cookie recipe.
Growing up, I LOVED these cookies! The version that we all know and love is usually made with a long list of ingredients, a lot of excess sugar, oils, and other things that don’t really need to be there. I still love enjoying the classic version but if I’m honest, I don’t feel as great afterwards physically. I enjoy it more for the experience, connecting with others, and being in the moment! That’s also why I wanted to make my own version using simple ingredients, that was easy to make, AND tasted just as good as what you would get at a bakery.
Whenever I make a recipe, especially a healthier treat or dessert, I have my mom as my first taste-tester. She has a real sweet tooth (probably where I get mine from π) and is one of my toughest critics! Nine times out of ten she tells me it needs to be sweeter. But when she tried these cookies for the first time, she said they tasted like they came straight from a bakery. So I’d say that’s a mission accomplished! There’s a reason this has become a staple recipe in my family and one of my personal favorites.
These cookies are thick, chewy, and have the best chocolate peanut butter combination. The crisp outside and soft center are complete texture heaven! We’re using only ten simple ingredients that you might have on hand already to make things even easier. In this healthier version, there’s oat flour instead of white flour, coconut sugar and maple syrup as unrefined sweeteners, and natural peanut butter rather than conventional that’s usually filled with added oils and GMO sugar. By making these swaps, this recipe is a pretty nutritious snack, treat, or even addition to breakfast that won’t leave you feeling off or on a blood sugar roller coaster.
Unlike most cookie doughs, you don’t have to chill this one so they’re ready to bake and enjoy in no time! What Youβll Need
- Oats – A pantry staple of mine are One Degree Sprouted Oats, they’re gluten free, organic, glyphosate free, and sprouted so they’re easier to digest.
- Oat flour – You can buy pre-ground oat flour like this, or I like to just make my own by blending oats.
- Peanut butter – I use an Organic peanut butter where the only ingredients are peanuts and sometimes salt. Any nut or seed butter will work, just make sure it’s on the runny side so it’s easier to mix! Note that making these with sunflower seed butter will turn the cookies a slight green color because it reacts to the baking soda. They would still taste amazing!
- Eggs – These help bind the cookies together and help with the fluffy, soft center. I haven’t tried these with an egg replacement!
- Coconut sugar – I like coconut sugar in baking for a lower sugar option, it’s lower on the glycemic index and it’s less likely to spike blood sugar compared to refined sugars. Any granulated sweetener will work (monkfruit, organic cane sugar, etc.)
- Maple syrup – You could also use honey or agave as a liquid sweetener here.
- Vanilla extract
- Baking soda
- Sea salt
- Chocolate chips – These Hu gems are my favorite dairy free and refined sugar free option, they’re only sweetened with coconut sugar! You can use any dairy free chocolate chips you like or regular if you don’t need these to be dairy free.
How To Make
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- In a large mixing bowl, add the peanut butter, eggs, coconut sugar, maple syrup, and vanilla. (Tip: By mixing the wet ingredients first, the consistency will be like a thick caramel. I prefer to mix with a silicone spatula so it doesn’t stick as much!)
- Mix in the rest of the ingredients except for the chocolate chips.
- Gently fold in the chocolate chips until mixed throughout the dough.
- Using a cookie scoop or a spoon, scoop out about one heaping tablespoon for each cookie dough ball. Roll each into balls and set on the baking sheet.
- Flatten each cookie dough ball using the bottom of your palm. (Tip: You’ll want to flatten them quite a bit because they don’t flatten very much while baking.)
- Top with additional chocolate chips and sea salt.
- Bake for seven to ten minutes or until slightly golden and firm.
- Let them cool completely before removing from the tray and enjoy!

- pinch sea salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
- Mix together peanut butter, eggs, coconut sugar, maple syrup, and vanilla. The consistency will be similar to a thick caramel.
- Whisk in the rest of your ingredients except for the chocolate chips.
- Stir in chocolate chips.
- Using a cookie scoop or a spoon, scoop out about 1 heaping tablespoon for each cookie dough ball. Roll into balls and set onto baking sheet.
